Please Help me plan my trip.. Disney Round 2

Ok we've been back a week and I'm planning round 2.

I am thinking Jan 16 /09 or Feb 6/09...I would like to go before then but Christmas is insane there I guess! Start of January its too cold ...lol

Last trip
All Star Sports / meal plan / 8 day park hopper ~Water park and more.
~ We Didn't do any water parks.

Advice on where we should stay?
~Reasonable
~Maybe a kitchenette area. Would prefer to cook some of our own meals. We did the dining plan last time but found almost every TS meal frustrating. We own a restaurant and were very disappointed with the poor level of service we recv'd. We sat through most meals thinking wow, they'd never do that at our Restaurant...lol
~Prefer on disney Property Still

~Maybe a 2 days park hopper
Would like to go to Seaworld, Universal , Bush Gardens....

Please help! Trip 1 was so overwhelming to book!!!
 
Which restaurants did you go to? I find a lot of the ones in the park are more about style and flash than they are about good food and good service. I had a wonderful experience at resort restaurants like Kona/Spoodles/Chef's De France/Boma/California Grill.

I won't be getting water park and more, since last time we didn't like disney quest, don't plan to visit pleasure island and only have time for one water park day. IF we do one day at a water park we'll just pay $40 to get into that one park.

~Whispering Canyon was the worst experience ever! Reservations were for 9:25..they sat us at 10:15-20 ish..then the server sat another table beside us about 10min later...he came back then took their order first! My son fell asleep at the table cause it was about 10:45 by the time our food came...not a good time!!!
~Chef De France was pretty bad! Steaks were not cooked right! Creme Brule was burnt! Server slapped my husbands hand cause he touched the steak knife that was falling towards his lap..apparently the server was trying to put it beside his plate..Hello don't want any stab marks due to falling knives thanks...lol
~Le Cellier we were hounded by our waited just waiting for his TIP. that capped the meal off right..lol NOT! food was good at Cellier though!!
~Boma ..ok but the server never came to refill our drinks!
~

The only meal we enjoyed was one of of Concourse Steakhouse dinners. Best Servier " Nokia I think her name was from Japan! She was Awesome far exceeded any we've ever had..and we've eaten out alot and own a restaurant!!! She went above and beyond and enjoyed her job!
