Okay so this is my itinerary for me and my girlfriend - please let me know what you think and if its do-able =)

Saturday Feb 27th 2016
Arrive a MCO at 10:37am
Drop our bags off at ASMo at 12:00pm
Arrive at AK at 1:30
FP+ Dinosaur, Expedition Everest and Festival of the Lion King
Dinner at the Rainforest Cafe in AK at 4:00pm
Park hop to MK and arrive a 6:00pm
Ride 1 or 2 rides
Find a place for MSEP around 8ish
MSEP at 9:00pm
Leave after the parade and head back to ASMo to check into our room

Sunday Feb 28th 2016
Wake up at 7:00am
Get breakfast at ASMo at 8:00am
Head over to the other famous orlando park
Dinner at Chef Mickeys at 8:00pm
Watch Wishes from CR at 9:00pm

Monday Fab 29th 2016
Wake up at 7:00am
Get breakfast at ASMo at 8:00am
Arrive at MK around 9:00pm (around RD)
Dinner at the Crystal Palace at 5:55pm
Stay at the park till close

Tuesday March 1st 2016
Wake up at 7:00am
Get breakfast at ASMo at 8:00am
Head over to the other famous orlando park for day 2
Dinner at Hoop Dee Doo Revue at 8:30pm

Wednesday March 2nd 2016
Wake up at 8:00am
Get breakfast at ASMo at 9:00am
Arrive at EPCOT at 10:00am
Ride Spaceship Earth and FP+ Sourin'
11:00am ish Head to the World Showcase for drinking around the world
Dinner at the Rose and Crown at 7:10pm
8:00pm ish find a spot for Illumination
9:00pm Illumination
Head back to ASMo

Thursday March 3rd 2016
Wake up at 8:00am
Get breakfast at ASMo at 9:00am
Arrive at Blizzard Beach at 10:00am (if its nice, otherwise we may sleep in a bit then head to HS)
Dinner at 50's Prime Time Cafe at 6:30
See Fantasmic! if its running

Friday March 4th 2016
Have a relaxing morning at the ASMo
Arrive at EPCOT around 11:00am or 12:00pm and finish up Future World
Dinner at the Coral Reef at 4:00PM
Take the monorail over to MK
Stay at MK till close

Saturday March 5th 2016
Wake up and head to the airport to head home *womp womp*

Have you run this by your GF? Is she that go-go-go? Some of those days look insane to me. :) Like...

* AK and MK on your arrival day at noon? Check in at your hotel after the AK. Then, decide if you want to head out to the MK or if you're good and want to stay in. Then if you do go to the MK, you're already checked in for when you get home late.

* Up at 7, off to Universal, then back for an 8:30 HDDR? Why not have dinner somewhere in Uni and close out that park instead. Sounds way more relaxing.

* Ditch Chef Mickey's. Not worth a trip to the CR just for this. Maybe grab dinner at that other park.

* Your Epcot day sounds good!

* BB / HS day sounds good!

* Friday does not sound like a relaxing morning if you're still planning to hit Epcot and the MK after getting a late start. :)

So much action in there!

I would definitely take your two "other park" days and turn those into one day where you stay late there (and eat there) and then a half-day where you leave there by 2pm or so, get back to the hotel, relax, and then hit up your evening HDDR or Chef Mickeys (depending on which you prefer).

Hmm, you raise some good points here. I suppose going back to ASMo to check in after AK would be a good idea then see if we have enough energy to go to MK to see MSEP.

Idk if we'll for sure be waking up at 7am on the days that we go to US so that might also be something to consider.

Actually, you can check in when you drop your bags. Your room may or may not be ready, but at least you'll have what you need when you get back from any park you choose.

Dinner at 8 and Wishes at 9 probably won't work either. It's unlikely you'll get seated on time, and if you want to see all the characters, you may not be out before Wishes starts.
 

Check in ahead of time and you might get notification that your room is ready and you might be able to drop your bags in there as soon as you arrive.
First day looks good to me.
Sun 28th- agree with pp, just stay at other park and eat there.
Mon 29-Even though they say RD is 9, they let people in at 8;45. I'd leave resort by 7:45 and you'll have a good spot to get in park and beat crowds. Crystal Palace IMO is completely not worth the price. Extremely disappointing and average.
Tue 1st-Again, I would just stay at other park and have dinner over there.
Wed 2nd-No Test Track?
THu 3rd-looks great
Fri 4th-looks great

Would I not be seated on time even if I have an ADR?
 
I see a mutiny after two days. I'm exhausted just reading your plans.

I think your arrival day is not realistic. I would pick a park and stick with it.

I agree with the PP that Chef Mickey on your Universal day is a waste of time. I would not rush back for it. Eat at your resort if you do not find something convenient to that park, but I would cancel this one.

Then on our second day we'll spend the day at US and grab dinner at ASMo when whenever we get back.

Does that sound more do-able?
 
Sounds like fun! I've gone right at that time several times. Overall, I like your itinerary...a few thoughts:

On opening day, I'd be more inclined to pick up a FP+ for the Safari. To me, that's a "can't miss" at AK. You really don't need a FP for Festival of the Lion King. Just show up a few minutes before and you should have no problem getting in. Also, if all you're dropping bags at ASM about 12:00, you should be able to get to AK well before 1:30. (I'm assuming you have a car since you're going to Universal during the trip)

Sunday...dinner at Chef Mickey's 8:00, then watching Wishes from CR at 9. Chef Mickey's is one of those that seems to run late. Don't be surprised if you miss out on Wishes that night. Where were you planning on watching from? I know you can't from the bridge between CR and BLT...Not having stayed there, I'm not sure what the public observation places are. I know many go to the beach at the Poly... Assuming they're having it, you can watch Wishes close up on Monday or Friday.

Wednesday...I know someone mentioned skipping Test Track, but you can't FP that and Soarin because of the tiering. I agree with keeping the Soarin' FP; we'll often do Test Track standby in the single rider line. You'd be together the entire time until you actually get in the car and there's a chance you could wind up in the same car, just one behind the other. Also, it isn't necessary to find a space at 8:00 to watch Illuminations at 9:00. The best part of Illuminations is looking up, not out. Some like to use their Rose and Crown ADR to get a viewing area for Illuminations, but yours might be a little early for that. We did that once and wound up covered in fireworks ash. When you do pick a spot for Illuminations, just be sure any wind or breeze is not in your face.

Thursday...I'm not sure when Fantasmic will be running that time of year. If its 7:30, you likely won't make it because of your 6:30 ADR. If 8:30, I think you'll be OK, but you'll need to arrive a decent time ahead.

As I said, it sounds good. Just be careful with planning things after your ADR's. While sometimes you can be out one hour after your scheduled ADR, often you won't be. In some cases, you may not even be seated 20 minutes or so into it.

Do online check in up to 60 days ahead of your arrival, and you never need to wait at the front desk to check in. They will text you with your room number, you stop by the CM holding the ipad at the sidewalk and head straight to your room.

I think the doing Dinosaur, EE and FOLK with FP in that time frame is unlikely. FP+ doesn't allow you to schedule overlapping FP+, so you'd have to get something like 12:30-1:30, 1:30-2:30 and 2:30-3:30 which might be tricky to do. And I agree with a PP that you should include the Safari if possible.


And on your Universal Days, I suggest getting there as close to (or before) opening as possible to avoid long lines, esp. if you are going to the Harry Potter stuff. Universal lets their own resort guests into HP an hour early, so it's already going to be crowded at the official park opening. Since you are planning to leave US to go back to WDW for dinner (which I would seriously rethink if I were you), you want to maximize the time you are there.
 
Hey guys I just ran my revised itinerary by my GF and she loves it. We decided to chuck Chef Mickeys and have dinner at our resort that day.

We also decided to head back to our resort after AK and see if we're up for hitting up MK that night.

I don't know where you're flying in from, but seeing February (and being from New England) makes me wonder how likely it is that you really WILL land at 10:37am and be at your hotel by noon. If you're from an area that has questionable winter weather, delays could throw your entire first day off completely.
