We will be taking our first cruise for our honeymoon in June next year. I've searched for a timeline for when we should be booking or getting certain things but didn't find one. What am I missing?

6 months prior- get passports

120 days- book excursions, do online check in, full payment due (we are concierge)

What else can we do ahead of time? I'm so used to doing WDW where it feels like we need to book things ahead of time. What can be booked onboard?

Onboard you can book mixology/tastings classes; additional Palo/Remy seatings; spa treatments. If any of that interests you. You don't HAVE to be anything onboard, if you don't want.
 
Also character greetings and character breakfasts (if available) are now bookable online at 120 days. Spa and specialty dining will be then too but as said you can then book additional specialty dining once onboard. Alcohol tastings and any additional character greetings will be once onboard too.

You have to pay before you can do online check-in and book things btw so best to put that at 121 days to make sure you are ready.
 
Ask about tastings. This spring, concierge guests were able to pre-book some tastings ahead of time.

Also, while booking opens at 120 days, you'll be able to submit your requests to shoreside at 125 days. I typically just jot things down in an email and schedule it to send so I don't forget.

You didn't specifically mention a cabana. Shoreside concierge can take care of that for you too.

Any particular dining rotations you want, special needs in the cabin, etc can also go in that email. Shoreside is really one-stop shopping for these type of things.
 

You can order some flowers or other gifts, including a 1 day rainforest pass (only available before hand) a bit before sailing as well. It's a special occasion!
