It's A Happy Day

I am starting my planning for fall of '08 - no exact date set as of yet but it will be Sept to early Nov. Most likely October to coincide with our Anniv. Anyway, cast includes (ages listed are the age they will be then!):
Me - 30 something
mother & wife. Disney freak like soooo many others around here
DH - will be 40 when we go
- Likes Disney but not as much as me!
DS7 - willing to try new things - Pooh fanatic and loves the Power Rangers TOO! He is your typical boy - rough & tough, loves sports - football/baseball are faves.
DD6 - she was the shy bug last time - loved open things but not being enclosed or not being able to see what was to come. Hoping she will be more adventurous this time around. Truly a girlie girl.
Both enjoyed pin trading and autographs
Now the last time we went they were 3 & 4 and this was their 1st theme park/amusement park type adventure. I know, talk about overloaded senses but hey how neat is it to say my 1st ride EVER was POTC
I planned obsessively for months and now am starting again....DH gave me the green light to book for next year
We are planning on 7 nights with 5 day passes with water park options (will do 2 days of water parks!) Hopper passes a must for us as well. Getting Dining Plan too and so far must hits are LTT and WCC. I want to try Canada and Sci Fi. CS - Cosmic Rays & Earl of Sandwich are musts.
Now for some questions:
What are the must do's for this age group? Both are 4 feet tall now so they will be able to go on more rides this time around. Rides, shows, other?
Talk me into MGM....DH & I just aren't that crazy about much there and plan on doing Fantasmic again and a couple things but don't think it will be worth a whole day. Anything different for a 6 & 7 yo that we couldn't do at 3 & 4 other than ToT and RnR (not sure the boy is ready for those and girl def. will not be doing!)
