Planning out our 7 day/6 night trip for May/June.... Need help!

We will be at Disney World from May 30-June 5th. I am planning out our days at each park so I am ready for making my dining reservations. Here's what I have so far...

Tuesday, May 30- DHS on arrival day/night
Wednesday, May 31- Epcot
Thursday, June 1- Magic Kingdom
Friday, June 2- Animal Kingdom
Saturday, June 3- Magic Kingdom
Sunday, June 4- Epcot/Disney Springs
Monday, June 5- What park would you recommend going back to on our last day (before our flight home)????

Does this plan look good?
 
What time is your flight home, are you using DME, any kids in your party, and how old? We always like to spend our last day at Magic Kingdom and soak in everything we can before heading home.
 
Southwest flights for that time aren't out yet, so we don't have our flights yet. We will be using DME. Our kids will be 13 and 9. I'm thinking MK for our last day, unless Pandora is open at AK and we need more time there....
 

MK on that Saturday may be quite busy. It is Gay Days and that's the day they go to MK which makes an already busy day, busier. We were there last year on that day. Big crowds.

Those are the exact dates of my trip! I'm going mid week hoping that Memorial Days crowds have thinned out by 5/30. My park days are similar except I have Epcot on arrival day. I agree about MK on Saturday, I have MK on Sunday. I've read that Saturday's and Monday's are the days to avoid at MK. I'm still undecided between AK & HS on Thursday & Friday. I'm tempted to go to HS on Friday because last year HS had evening EMH's and am hoping for that this year. I know EMH are supposed to be avoided but I want to spend time at the pool and arrive at the park later so EMH would help. As for your last day I would leave it open. I like to choose based on what we feel like we need to do again or what we missed.
