Well, while you're at BCV, I would access Epcot and MGM as much as possible. While you're at SSR, I'd hit MK, and DTD (and AK). Just a logistics thing, assuming you're using all WDW transport once you're there!
As for ways to break up your day -- I'm also moving on the assumption that little one will need downtime mid-day, so a "split" day is o.k. with you. So I'd couple shorter parks with bigger parks (like MGM or AK with Epcot / MK -- for example pairing a.m. AK / pm Epcot -- it gets so hot at AK by mid-day, and closes early anyway; and EPCOT is right there by BCV, so going in right after your 1yr old's down time will be easy, and if you had to leave early, also very easy! Also -- EPCOT has sooo many good restaurants to choose from!)
You don't say what type pass you'll have, however. If it's AP or LOS, then I suppose half-days at the parks are not an big issue. But if you'll be getting PH or PHP passes, I recommend alternating parks days and "downtime days" -- in other words, on the day you plan to do SAB, don't do parks -- perhaps do DTD, SAB, and a nice dinner out somewhere on the Boardwalk, or at another resort. Downtime days really save a vacation! Sleep in, eat late, reallly be leisurely about it!
For dining -- I recommend hitting the Cape May b'fast -- you're right there at BCV, and so many folks have enjoyed this!
When our kids were that age, they enjoyed a Pooh bear b'fast (either GF or CP would give you this) and Garden Grille (at Epcot) and also Teppanyaki (simple food, an entertaining "show" for adults, and most 1 yr olds could eat rice til they pop anyway!)
and Chef Mickeys (but only IF your child is ok with hustle bustle!)
