Pimiento Cheese?

I just had pimiento cheese for the first time and it's AMAZING!!! Anyone have a favorite recipe to share? I'd love to take it to my daughter's home for Thanksgiving dinner!
 
I don't have a good recipe for it, but it is a guilty pleasure of mine. I tried making it before using like miracle whip, velveeta and pimentos. It was OK, but I found it cheaper to buy it pre-made.:rotfl2:
 
I like this one but southerners would tell you real Pimento Cheese Spread does not have cream cheese.

Master's Pimento Cheese

1/4 cup cream cheese, room temp
1/2 cup mayonnaise
1/2 cup sour cream
1/4 tsp garlic salt
1 T sugar (not in original recipe, but I added it per Paula Dean)
2 cups shredded cheddar cheese
1/2 cup parmesan cheese
1/2 cup diced pimentos (I just add a small jar)

This southerner thinks this sounds fabulous! I think it's good to make pimento cheese using the cheese you like best. I usually grate a hot, spicy cheese to make my spread. Many things are truly delish. :)

You're right- although Pilot's Grille went out of business several years ago, sometimes I can still find the Pilot's Cheese!
 
There are a million receipes out there, I've been eating it all my life. And yes @Cloudy, we southerners are going to tell you no cream cheese in it. I'm a purist, just real cheddar cheese, pimentoes and mayo. http://www.southernliving.com/food/kitchen-assistant/pimiento-cheese-recipes

And it HAS to be Duke's Mayo!

Honestly, however, I can't stand mayonnaise, Duke's or not, so I don't eat pimento cheese.

DH has a really good recipe though that everyone else loves. I know it has cheddar cheese, pimentos, & Duke's mayo in it & doesn't have any cream cheese.
 
I can take it or leave it. I like it with jalepenos. My mama used to make pimento cheese long ago.
 
What do you mean 'recipe?' you mix three ingredients to your own personal taste. That's not a recipe, that's a shopping list. Mayo, cheddar, pimentos. If you want to avoid the acidic flavor of jarred or canned pimentos - they sometimes have an acid added to preserve them- then char a red pepper under the broiler all the way around. After you let it cool, remove the charred skin and seeds. Chop. That's it.
 
I've never made one that was as good as what is available in the stores/restaurants! We love Palmetto Cheese (store bought) and Chicken Salad Chick's pimento cheese (for restaurant).
 
Pimento Cheese is my JAM! I love it. I've tried all of the store versions, YUCK. My mother-in-law's recipe is the very best I have ever had. It's quick to make and does NOT have cream cheese - that's not in authentic Pimento Cheese. It's good cold as a dip or made into a grilled pimento cheese sandwich.

20 ounces shredded extra sharp cheddar cheese
1/2 cup mayo (gotta be Duke's, use a little more if it seems too dry)
7 ounces chopped pimentos (make sure to drain first)
1/4 cup sugar (that's what the recipe calls for, I think it's too much so I cut it in half)
1/4 cup white vinegar

Mix well.
 
I always just buy it pre-made, but do love it. Pimento Chesse on Club Crackers is one of my guilty pleasures.
 
I HATE mayo with the power of a thousand suns and my mom never put it in her's growing up. Velveeta, pimentos, usually pepper jack, maybe some ricotta, a little bit of sour cream. I love pimento cheese, when I got out of the hospital after 10 weeks and then a physical rehab facility for another couple of weeks, and was finally home to eat normal food, pimento cheese (on white bread, lol!) was the first food that I wanted. It was the best sandwich I'd ever had in my life. I didn't have an appetite but I actually wanted that pimento cheese, and it was the best.

Ugh...Duke's mayo is the worst. If it's made with Helmenns I might give it a try.

I could be the original founder of mayo haters united and all of its various other forms masquerading as something else - like ranch. Don't get me started on mayo's bastard fancy pants lovechild - aioli; just because the name is fancier doesn't make it not mayo. #shudders

I think I'm a bit older than you, so I'm thinking I may be the original founder of "mayo haters united"! LOL!

I can. not. stand. mayonnaise or anything w/ mayonnaise in it.

We recently went to a local tea room which combines traditional British tea w/ southern cuisine. We had their "afternoon tea", & more than half the things on the tiered tray I wouldn't eat because... mayonnaise - deviled eggs, chicken salad pastry cups, egg salad finger sandwiches, little pimento cheese finger sandwiches...

I've told my DH, the day I willingly eat mayonnaise is the day you know the world is ending.

And mayonnaise is so southern - it's in everything!!

I also can't stand ranch dressing, blue cheese dressing, the white sauce at Japanese restaurants (it's made w/ mayonnaise), any other kind of sauce or dressing that has mayonnaise in it, & any form of aioli.

I will not eat sour cream plain, but I will eat it baked/cooked in things.

DH will make me special deviled eggs w/ only mustard. He'll also make me my own pimento cheese w/o mayonnaise.
