Picky Eater!!!

I am planning my Disney trip for the end of November for me and my dad and I am trying to pick some new restaurants to try out but I am extremely picky!! At some of the nicer restaurants do they accomodate picky eaters? I am afraid to book them and then I won't like what they have. Anybody have any advice on this? Let me know thanks!
