I'm not sure it matters (flights are delayed all the time). The only thing that could happen would be if it was CRAZY busy and they ran out of cars, but that is highly unlikely. I think it is more important to return it on time, if you pick it up at 2:00 pm you need to make sure you drop it off before 2:00 pm on the return day.

Instead of picking up at, say, 9 we picked up at 11. We had the return set for a 3 day 3 hour rental which equaled a 4 day rental.
The problem (which was fixed after a long wait in the line to fix problems) was that traffic (to lax) was very light and we had left early anyway, and we got back inside the grace period for returning the car in what they considered 3 days. Not 4.
And our rate changed to more than the 4 day rental. Not a huge amount but that's not what I felt was ok (especially since we did the paperwork at 10-something but we drove out the gate showing our paperwork at the 11 timeframe so it should have worked out) so I waited in line and got the price adjustment.
And more knowledge to be more careful when returning in a situation like that.
So be careful with your return if it's a similar situation.

Had I gone to 10 a.m. on the 11th (our flight lands at 9:55) to 1 p.m. on the 15th (our flight home leaves at 3:30), it wouldn't been more than $200. So, they were going to charge more than double for 4 extra hours. Do I need to be worried about anything as far as picking up 2 hours early or dropping off an hour later than we said?

Not clear what you are hoping to do. Rental rates are usually based on 24-hour days, so a noon to noon rental for your dates would be a 4-day rental. Picking up 2 hours early (at 10 am rather than noon) moves the expected return time to 10 am rather than noon as well. If you actually return the car at 1 pm, that will be 3 hours into the 5th day. It would be common that the hourly rate is about half the daily rate so the three hours will kick over to a full day in rental-car land. So, yes, you should be worried about this scenario unless you want to pay for an extra day. To keep the charges the same after a 10 am pick-up, return the car by 10 am on the return day (you might get a 30-minute grace period before the additional charges kick in, but it's unlikely you will avoid added cost after that).
