PH and FP+ Experts: I Need Some Advice

We're going to WDW Nov. 11-12, Veteran's Day Weekend. We've decided to add PH to be able to do more than two parks. We're going to MK on Nov. 11. It's a MNSSHP night, so we'll probably hop to Epcot in the evening unless DHS or AK extend their hours. I've made FP+ reservations for MK that day.

On Nov. 12, we will definitely end up in Epcot at the end of the day. DH wants to see at least some (even from afar) of the Big Bad Voodoo Daddy show. I know it will be crowded with F&W. We will likely start the day in DHS, where we really want to go on just two rides- TSMM and Star Tours (it will be DS4's first ride on Star Tours; DH is super excited!). At Epcot on either evening, we must do Soarin'.

So, here's my question. On Nov. 12, are we better off making FP reservations for DHS, which we will get to as close to RD as we can? Or should we make FPs for Epcot, which we will arrive at in the late afternoon/early evening?

I will make Nov. 12 FP reservations first thing tomorrow morning, so your advice is appreciated. Thanks!
 
If you can get to TSMM at rope drop, then FP Soarin.

If you'll be arriving later, FP TSMM and as soon as you pass the FP entrance, go onto the app and book Soarin. Star Tours doesn't have much of a line so you don't need a FP for it.

Lots of different opinions on this one. We always hop. My strategy has been to do FP+ for the second park of the day. We are able to do a lot at the first park by getting there for rope drop. I find the FP to be more helpful at the second, since by the time we make the first hop it is early afternoon and crowds have picked up. I usually try to schedule them for between about 2 and 6 so that we also have the opportunity to look for additional FP once the first 3 have been used. This strategy has worked really well for us so far.
