Peanut butter fudge

I have made 3 batches of this stuff and can't stop eating it. I packed up the boxes to send off tonight and there is only a little left. I have to stop. I really hate all this good stuff over Christmas. I have no willpower. Oh yeah, the rum balls and burbon balls didn't help either.

Anyone else have this problem?
 
Well, peanut butter is actually rather healthy because of all the protein... umm, yeah, I'm sticking to that. :rolleyes1 ;)

And Grumpy Pirate will tell you Rum anything is always good. :thumbsup2 :teeth:
 
I love peanut butter fudge! Every year, at Christmastime, the police chief's wife, who is an old high school chum of mine, makes fudge for me and the chief's secretary. The peanut butter fudge is my favorite!

I have no will power either!;)

Would you mind sharing your peanut butter fudge recipe, please? I have never made it but I have several peanut butter lovers in my family that would enjoy it.

I made lemon cookies with red and green M&Ms to bring over to my SIL house, and actually did pretty good with them. I had one last night that was left over, and brought the rest here to work. I won't eat them here, because Mon-Fri I don't cheat!!!!!! Weekends.... not so good......

Sorry I didn't get back to this post. I will include my fudge recipe. Well, it is my sister Pat's recipe.

"Quick Peanut Butter Fudge"

2 cups sugar
6 Tbsp butter
1 cup evaporated milk, not sweetened.

Mix and cook in an electric skillet at 280 degrees. Stir and bring to a boil. Allow to boil for 5 minutes. Avoid stirring but watch it doesn't scorch on bottom, adjust temp as needed.

Turn off and add:

1 1/3 cup peanut butter
1 tsp. vanilla
1 cup miniature marshmallows. Smash those babies into the cup firmly and it should be closer to 1 1/2 cups.

Beat, by hand, the fudge till the shine dulls and it begins to get stiff. Place in buttered 8x8 dish.

I have used a regular sauce pan and candy thermometer (mine is broken) and it is okay. The electric skillet is actually easier.

I have also used regular sized marshmallows but cut them in halves or smaller so the melt quickly.

I have doubled the recipe and it turned out fine doing both in the skillet.

I don't know what brand it is, I have to look at the label as I'm buying it, but on the container of one of the jars of marshmallow is the BEST peanut butter fudge recipe I have EVER had. I think I'll have to get cracking. Now that you brought it up, I am REALLY in the mood.

It's Marshmallow FLUFF. It also makes the best chocolate fudge. YUM! We were all raving about it at a party and I chased down the woman who made it, for the recipe. She was actually embarrassed to tell me it was so easy to make with a jar of Marshmallow Fluff. :blush:
