Peanut Butter Christmas Mice



INGREDIENTS:
1/2 cup butter, room temperature
1 cup creamy peanut butter
1/2 cup packed light brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 1/2 cups all-purpose flour
1 cup peanut halves
those 'little silver balls' (I don't know what you call them!!)
60 3-inch pieces red shoestring licorice

DIRECTIONS:
In a large bowl combine butter and peanut butter; beat until creamy. Add brown and white sugar and beat until fluffy. Beat in egg, vanilla extract and baking soda until well blended. With mixer on low, mix in flour just until blended. Cover and chill for 1 hour, or until firm.
Preheat oven to 350 degrees F (175 degrees C).
Shape 1 level tablespoon of dough into 1 inch balls. Taper each ball at one end into a teardrop shape. Press flat on one side. Place flat sides down, 2 inches apart on ungreased cookie sheets. Press the sides of the dough in to raise the 'backs' of the mice, as dough will spread slightly during baking.
Gently push 2 peanut halves in each 'mouse' for ears, and 2 of 'those little silver ball' for eyes. With a toothpick make a hole 1/2 inch deep in the tail ends.
Bake in preheated oven for 8 to 10 minutes, or until firm.
Transfer to a cooling rack and insert licorice pieces as tails.

they sound adorable and yummy! I may have to try this one with my son. He would get a kick out of making these.
 

How cute! I wish it wasn't so peanuty! They would be perfect to make for Fairy Tale day at school but we have some peanut allergies! Wonder if it would work with sugar cookie dough if I made it drier than usual?

Almond Mice

1 cup butter or margarine -- room temperature
1 cup packed light brown sugar
1 large egg
2 teaspoons almond extract
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
Decorations
peanut halves
coarsely chopped raisins
red licorice laces -- cut in 3" pieces

Beat butter and sugar in a large bowl with electric mixer until fluffy. Beat in egg and extracts. Gradually beat in flour until blended.
Dough will be stiff. Cover and refrigerate 1 hour or until well chilled.
Heat oven to 325 degrees. Have cookie sheets ready.
Shape rounded tablespoons of dough into 1 1/4" balls. Taper each ball at one end into a teardrop shape. Press one side flat. Place flat sides down 2" apart on ungreased cookie sheets. Press in sides of balls to raise "backs" of mice. (They spread slightly as they bake.)
Gently push 2 peanut halves in each for ears and 2 pieces of raisins for eyes.
With a wooden pick, make a 1" deep hole at the tail end.
Bake 9-12 minutes until bottoms are lightly browned. Remove to rack. Insert licorice tails. Cool completely.

I made something like this a few years ago. Let me see if I can remember it.

Ingredients:

Marachino cherries with stems still on (drained)
melted chocolate chips
Hershey kisses (unwrapped)
Almond slivers
small tube of white icing
small tube of red icing
wax paper


For mouse body & "tail": Dip a cherry into melted chocolate by holding onto the stem. Place on wax paper.
For mouse head: Attach a hershey kiss to cherry. Flat side of kiss attaches to body.
Ears: stick ends of 2 almond slivers into the melted chocolate & adhere them to back of head where head meets body.
Use white icing to make 2 dots for eyes.
Use red icing to make dot for nose & 2 little dots on top of white eye dots.

Allow to cool in refrigerator until hardened.

Eat by holding onto the mouse tail & dangle into your mouth. LOL

I definately want to try the almond ones! I will have to ask if the child is only peanut allergry or nut. I know the room isn't a nut free room (well maybe a few nuts are in there HAHHAHAH) He won't eat anything he isn't sure about.
But they would be the cutest thing for Fairy tale day!
