My dh mentioned yesterday that since we moved he won't get to have the peanut brittle a lady at his old work used to make. He said it just melted in your mouth.
So, anybody got a good, melt-in-your-mouth peanut brittle recipe for me?
Thanks!
ann

I have made this every year for at least 10 years now and it has never failed! (except the time I tried to double it!) Also, be careful, it gets very hot in the process! I hope you like it!

Microwave Peanut Brittle

1 cup sugar
1/2 cup light Karo

Put in 1 1/2 quart glass container, cook on high for 3 minutes. Remove, stir and cook 3 more minutes.

Add:

1 teaspoon butter
1 teaspoon vanilla
1/2 teaspoon salt
1 cup raw peanuts

Stir and cook 3 minutes on high.

Add:

1 teaspoon soda

Stir and pour immediately on buttered cookie sheet.
Cool.

(Note, this recipe cannot be doubled)

This recipe is not intended for high wattage microwaves! I just tried it in my 1100 watt microwave and the syrup burned during the second 3 minute cook time. I'm going to try it again and adjust the cook times and see if I can get it to work.
I guess it's just not my day; nothing edible has come from my kitchen today!

Thanks for the heads-up, Hunny Pots. Mine was doing pretty well until the last heating. Then all of a sudden it was dark brown! And I was watching it too! Candy-making involving heating sugar and syrup in any way has never been my strong point.

I cut the first two cook times down to 1:45 each and kept the last at 3 minutes and it came out perfectly! I just made two batches and it is wonderful stuff. I only hope there's some left for Christmas!

:earseek:

YIKES! Sorry ya'll! I had no idea! Thanks for the heads up on the higher powered microwaves....I guess I have an old one. I will put it in my notes for the next time I share it! (and for the day I get a new microwave :D )

:sad1: I am sorry for all the problems I caused!!

Soda? Baking soda or drinking soda?

Baking soda. It's a really cool "experiment" when you add it. ;)
