You should note your allergy on any reservations you make. Before going I would call and tell them again and try to alk to the specific resturant's if possible (dining should be able to help you with this).

At CS places ask and make sure they know before you order - ask to see ingredients if necessary and also ask to make sure nothing was prepared near what she is allergic to.

Disney seems to be very accomidating when it comes to guests with allergies. You shouldn't have any problems at a table service restaurant.
 
I've heard that they're very helpful with regard to allergies. Make sure you bring some wipes to keep her hands cleaned up, she will probably be touching a lot of things that could have residue.
 

One other thing, all the prepackaged foods list ingredients that pose possible food allergies and if those particular foods were prepared on equipment that also processes the allergens. To be safe bring an epi pen and some benadryl with you for any emergencies. Someone could accidentally make a mistake or just be misinformed.
