I'll try to keep this brief- we are staying at WDW then going on a 3 day Disney cruise. After we disembark, we have 11 hours to kill before we have to be at the airport, and would like to return to WDW. We did buy ground transfer from PC--> MCO, but are not opposed to taking the loss on it. I am wondering the best travel option to get from PC-->WDW-->MCO in one day. A rental car would be fine because we could keep our luggage in it while at the park but I worry that by the time we get one at Port Canaveral and get to WDW, our day will be about done. Anyone have tips/advice or experience with this? Also, what is the best way to add on the additional day ticket-wise, and is it legitimately $10 to do so?

We rented at car while in port at PC on a cruise. The rental place was a shuttle ride away (about 5 minutes from the port - rental place providied a shuttle). No wait at all for our car.

You’d have to check online to see the exact price of adding a day to your tix. All tix must be used with 14 days of first use.
 
Also, what is the best way to add on the additional day ticket-wise, and is it legitimately $10 to do so?

You'll need to add the extra day before the end of the last day that you use your ticket. I would go ahead and do it on your first day, so you'll have a bit more lead time for booking your fastpasses.

The cost will depend on how many days worth of tickets you already have.

You didn't say what time your flight was but even with a late evening flight, you may not have as much time to kill as you think.
Depending on the time your cruise ship docks and is cleared for customs, you should be able to do the "walk off" disembarkation between 8 & 9 am.
A rental car will probably be the quickest way to get WDW. Catch the shuttle from the Port to the rental facility and drive to WDW (allow 1.5-2 hours)
Arrive WDW...best possible time 9:30-10:00am (could be 1-2 hours later depending on disembarkation time, Customs clearance, shuttle wait, traffic etc)
Visit WDW........depending on flight time and how quickly you can get off ship... maybe 4-6 hours of park time (hopefully)
Leave park, get to car and drive to MCO - at least 30 minutes (45-60 if you are in Magic Kingdom)
Return rental car at MCO (2.5-3 hours before flight time). MCO is a busy airport and security can get bogged down so you want to return that rental car and give yourself at least a couple of hours to comfortably drop off the car, get through security and arrive at your gate before boarding time (that's why the 2.5-3 hours before flight that I suggest for returning rental car)

As others have said, if you already have a 4 or more day park ticket, you can add the extra day very cheaply. Just make sure you do it while your current ticket is still active. I recommend your first park day so that you have a few days to try to get some FP+s for the extra day.
