Paying package off early?

We are Canadians. Our stay is Aug 21-27 with tickets, and deluxe dining. Our final payment is July 6.

The exchange rate is very good right now.

If I pay off our package now and save on the exchange rate and at a later date they bring out free dining or some other package. Would I be able to, change to the new package and get a credit back with the new rate?

Yes, I do it for just about every trip. If you have a room only and change it to a pkg, they will refund the money to your credit card, then charge the new trip, but as long as you switch to the same deal you have (room only to room only or package to package) then they'll just transfer the money and refund your credit card for any difference.
