Fruit and matzoh kugel???? I thought kugel was kugel...I didn't know there were different varieties....recipe please!!!
Well NW surburbs of Chicago have Passover deplays..I would love the recipe for fruit and matzoh kugel . The second sedar is at my house , so i am looking for something different to server. Other than the traditional matzo ball soup, et al..
Here you go...
Ingredients:
4 cups matzoh farfel (1 box)
2 16 oz cans sliced peaches
1/2 cup + 2Tbsp margarine
8 large eggs
1/2 tsp nutmeg
8 oz plain yogurt
8 oz cottage cheese with pineapple
1/2 cup walnuts
1/4 tsp cinnamon
1/2 cup + 1 Tbsp sugar
Directions:
Preheat over to 350. Grease a 13X9 inch baking dish.
Reserve 1/4 cup farfel for topping.
In large bowl, combne the rest of the farfel with 1 1/2 cups warm water. Set aside.
Drain peaches, cut each slice into 3-4 pieces. Reserve 1/2 cup peaches.
Melt 1/2 cup margarine. Pour into large bowl. With wire whisk, beat in eggs, nutmeg, and 1/2 cup sugar. Stir in yogurt, cottage cheese, and peaches. Fold into soaked farfel until blended. Pour into baking pan. Sprinkle wih remaining peaches.
Melt 2Tbsp margarine. Into margarine, stir walnuts, cinnamon, 1 Tbsp sugar, and reserved farfel. Evenly sprinkly over kugel.
Bake 40-45 minutes until kugel is slightly puffed and set. Serves 16.
**I have to add that this has never served 16 at my house because ppl always go back for more. I generally make at least 2 of these, and keep one as an easy breakfast for during the rest of the holiday.
