We are meeting my aunt at Disney as she works there and is taking us for the day. My question is, can we leave from the special parking spot where employees park? Or can I assume once we are there we cannot leave without paying.

Yes there will be no problem if your aunt gets you into the CM parking lot. Is there really more to your question?

There is no toll booth when you exit the CM parking lot behind the MK, and you don't pass through the normal MK toll plaza to exit.

Ah the return to the CM parking after leaving without your aunt is likely to be an issue. Otherwise any guest could park in the CM lot.

You will not be parking in the Cast Member lot. Even Cast Members cannot park there when visiting the parks as guests.
