My wife and I are now locals with annual passes and we love to take advantage of our proximity to the parks by eating at various parks/resorts/properties a couple of times each week. To date, we've only done reservations so obviously parking has not been an issue but we have thought about how cool it would be to just head over to one of the bars or non-reservation restaurants at a resort, for example.
Am I correct that the best (and probably only) way to do this would be to just park at the one of the parks and use Disney transportation to get wherever we need to go (or walk if possible)?
Thanks!

That is what I would do. If walkable from DHS park there, if on monorail park at TTC and otherwise I would park at Disney Springs and take a bus to where you are going. It really does simplify the whole process when we already know the odds of being let in to a resort parking lot without a reservation are slim.

EDITED TO ADD: If you will use the Skyliner, that gives you options from DHS as well.

It really depends on several things.
  1. Which resort is prime consideration. You'll find it very difficult to get in the lot at the Monorail resorts.
  2. Who you get for gate security guard. Some are more lenient than others
  3. How you look/respond to questions. If you look like you are heading for a park and don't even know the name of the bar you are going to visit you'll probably be denied
Having said that, since you don't have an ADR for these excursions I'd first go to the resort and see if they will let you in. Then, if I get turned away I'd go to a park or DS to park the car.
