Park tickets and adding days while on vacation...

I have an AP and am not familiar with this, so I'd figured I'd ask here. My in laws are coming with us on our upcoming Disney trip, and we plan to get their tickets from UT like we always do. They are not sure if they will go to the parks every day, so we were planning on getting them the 6 day park hopper tickets at UT. Once we are there and they use them a couple days, can they upgrade their ticket to add a day if they decide to need it and pay the WDW price difference of $8 between the WDW price of 6 and 7 day? UT price difference for the 6 and 7 day park hopper is $22.

Yes, they can. As you say, they would just pay the difference between the gate price of the 6 day park hopper and the gate price of the 7 day park hopper.
 
We once added the Parkhopper feature for my mom after entering the parks. When we saw later that week, that we were not going to use that feature, they even let us revert to the basic ticket and refunded her money. This was at Guest Relations.
