Park hopping to Epcot on a Wednesday evening?

Hello! I'm heading to WDW for a quick trip with DH and 18yo DD 9/15-17, and I'm beginning to rethink my original park strategy (currently D1-EP, D2-HS, D3-AK). We'll be arriving late morning on Wednesday, 9/15 and have reservations at La Hacienda de San Angel that evening. I made a park pass reservation for Epcot because I wanted to make sure we'd be able to get into the park for dinner. We don't typically do a lot at Epcot, though, so now I'm thinking it might be a "wasted" park day. I know that no one here has a crystal ball, but what do you think are the odds that we'll be able to park hop to Epcot if I switch our park reservation to another park? Do you think the fact that APs will be available again on 9/8 will lead to a spike in attendance that could make park hopping difficult?

On a related note, if we start at Epcot and then park hop to another park after 2pm, are we guaranteed re-admission at Epcot? Sorry for the basic questions, but we haven't been to WDW in a few years.

2. Anything is possible, but I don't think that, in particular, will matter much.
3. Yes. (Although "guaranteed" is not a word I use much in regard to WDW.)

Thanks for your response! Yes — in retrospect, looking for any kind of guarantee right now is probably asking too much!
