Park Hopping Strategy

I need some opinions on my park hopping strategy. Here are the details of my trip: just me and hubby and two day park hopper. I would like to get to all 4 parks in those 2 days but MK is our favorite and would like to spend the majority of the time there. We have a Sunday/Monday with Sunday having MNSSHP. My current plan is:

Sunday- EMH at HS 8-10 am to ride TSMM and TOT once or twice. Not interested in anything else there.
Hop over to MK until park closes at 7 for party.
Hop to Epcot which closes at 9. We have a FP for FEA and thought about watching Illuminations since we have never seen it. BUT I really wanna try and do soarin and I don't know how I would fit that in with my FP unless we skipped Illuminations
Monday- EMH at AK 8-10 am and do Safari and EE.
Hop to MK where we have our 3 FP planned and stay til they close which is currently 11 but hopefully they will extend that when we get closer.

My major dilemma is that we will miss out on opening hours at MK both days but I feel like I would be wasting the EMH at HS and AK if we didn't do those in the morning and since we only want to do a few things at those parks I figured it'd be best to do EMH. My other dilemma is I would like to see AK at night. We will be back in January but there's just so much we want to do during these two days. I also saw that the two Monday's before we get there, they moved opening at MK to 8 so they might do the same for the Monday we are there. Should I keep the plans I have or switch them around.

I would keep what you have and plan on doing nighttime AK when you return in Jan.

I do think I would try to leave MK around 6 pm on that Sunday to get over to EP. If you wait until park close, you'll be with the rest of the crowds trying to get out. It might also give you a little more time to do Soarin' standby.
