Park Hopper Premium Tickets

Do the "plus" attractions (Blizzard Beach, DisneyQuest, etc.) count as a "park?" For example, I have a 10-day park hopper ticket with the plus parks which has 5 options...technically can I go to a major park all 10 days AND visit the extras up to 5 times? This would be a lot to squeeze in, I know, but I was just wondering if that's how it works.

Yes i had the 7 day pass but you will get 10 days in the four theme parks and 5 days in water parks, disneyquest, pleasure island.

That's exactly right! You can go to the four major parks for 10 days plus the others--water parks, Disney Quest, Pleasure Island, etc. The only difference is that with the premium 10 day pass you can hop between the major parks. You cannot hop between the minor attractions without using a plus for each.

Magic Kingdom in the morning, Blizzard Beach in the afternoon: Uses one day and one plus, works without the hopping option, that is, with non-premium tickets with plus pack also.

Blizzard Beach in the morning, Typhoon Lagoon in the afternoon, no other places visited: Uses zero days and two plusses, works without the hopping option.

Blizzard Beach in the afternoon and also the next morning: Uses two plusses.

Depending on when you use the plusses, a 10 day pass with plus pack can give you Disney fun on every day of its 14 day lifetime (15 possible days with non-expiration).

Yes, you may use 2 plusses in one day. Many do this by going to the Water parks in the morning and either DQ or PI at night. It will take off 2 of your plusses by doing it that way.
