Pantry Clean Out!

My fridge, freezer, and pantry are looking bare, and I'm loving it. It's all so organized. I like that the fridge is almost empty because that means we're not wasting food. Plus I actually like grocery shopping, so it means I get to go again soon haha. Last night I finally finished up the last of the popcorn kernels. It's cheaper to do popcorn this way, but I prefer the mini-bags flavor wise. I like popcorn for an evening snack because it's pretty good for me diet-wise.

Friday's Menu:
Breakfast - scrambled egg on 2 corn tortillas and grapes for me. DS had and apple, yogurt, and asked for leftover rice from last night (he loves rice).
Lunch - leftovers and a banana for me, chicken nuggets and grapes for DS, DH left his lunch in the fridge. Maybe he has client meetings today or something.
Dinner - pizza rolls and apple slices with cinnamon for DS at home, then we'll drop him off and go out to dinner (seafood place)
Snacks - probably won't have any since we'll be out late
 
Zucchini boats were excellent, and a nice change from the typical Italian ingredients. She has similar ingredients in a crock pot soup and for a salad, and I would definitely make those now too. Turns out I liked the black beans...who knew? I also made a salad that used the last of my avocado and used some apple cider vinegar in the dressing. That's one of my forgotten pantry items that only seems to get used to catch fruit flies.

No firm budget for me. I'm doing this more to use what we have in storage. Also, in the summer I try to get my fruits and veggies from local farmstands. It's sometimes cheaper, but they do taste better. Today I picked up some yellow tomatoes, 2 heirloom tomatoes, a cuke, a summer squash, a canteloupe, 6 ears of corn. Already used a bunch in tonight's dinner.

I'm gonna have to check out the crock pot soup version of the zucchini boats, those sound right up my alley :)

I agree that farmstand/CSA fruits and veggies taste better, and, for us, usually last longer as well!

Yesterday was another great day of no splurging. We had to run to the post office right around lunch time. I was sure DS was going to ask for McD's when we passed it...but he didn't! I hope he's getting used to not stopping every time.

Dinner was a hit. I made refried bean tostadas. All I did was lay corn tortillas on a baking sheet, spray with olive oil cooking spray and sprinkle with salt. Baked on 425. I don't know how long because I just kept an eye on them. I had 2 trays and switched racks when the top rack started looking brown and then baked until the second pan started browning. DS ate 4 of them, again with lettuce! This kid has never eaten lettuce in his life and now he's had it two nights in a row and asked for more. We had some leftover cooked chicken breast that I cut up and gave to DH for his tostadas. He prefers meat to beans for his protein. They both requested I add this to the weekly rotation. Once we clear all this other stuff out, I'll definitely do that!

Thursday Menu:
Breakfast: Cream of Wheat made with milk and a banana for me, DS wasn't really hungry and snacked on crackers
Lunch: 1 leftover tostada and grapes for me, corn dog and grapes for DS
Dinner: Finally making the honey spice chicken thighs from Budget Bytes, serving with white rice and sauteed zucchini
Snacks: Usual apple slices with cinnamon

Tomorrow we're going to do a date night instead of the planned menu. There's a kid's night out at the local gymnastics place, and DH and I could use some free time together. Only $18 for 3 hrs of babysitting? Yes please. I think we'll do seafood.

Hooray for another day of no splurging!! And yay on your son not trying for McD's :)

Did well today...
B: hubby and I had hot cereal with peaches. The cereal has been in there awhile, but I always forget it's there. DS1 had a waffle.
L: nuggets for DS1. Hubby and I had roast beef sandwiches on the last two Telera rolls. Had some apples and grapes on the side. (No chips, for once)
D: burgers. DH made a little sauce with mayo and the pickled jalapeños that i opened yesterday. It was good; a nice change. On the side, we finished up the frozen french fries, had some ears of corn, and had some couscous blend(also been in there a while).

Hot cereal is one of my favorite cool morning breakfast meals :) That sauce your husband made sounds great! Keep up the good work!

I always forget about the hot cereal too. I had some this morning ♪♫♪ for the first time in forever ♪♫♪. I was actually about to make some oatmeal (which I don't really like, but I wanted something warm - it was storming!) and then I saw it and was like Ohhh yeah!

I'm proud of us tonight...I was just about to take dinner out of the oven when DH called. He left his office keys in my truck and had no way to lock up before leaving work. So I had to put dinner away and then drive a half hour to give him the keys. Usually we'd just go ahead and stop somewhere to eat...but not tonight! I turned right around, drove home another 30 minutes and we sat down and ate the dinner I had cooked. I gotta say, I don't know if I would have done that if it weren't for this thread. So thanks!

ETA: Dinner wasn't that great though. I made the Budget Bytes Honey Spiced Chicken Thighs. We weren't impressed and it made a huge mess (think burned on honey all over the pan and now it needs to soak). I won't make it again.

It's been storming here too, I love it!! Looks like the 100+ heat days are heading back our way after the weekend though :(

Bummer on the chicken thighs, it's always upsetting when an anticipated meal doesn't turn out as good as we hoped :(

What are Budget Bytes? Sounds intriguing.

We are almost done with week 4, and have done great (minus my slip-up at Subway this week)

Yesterday the kids and DW had pancakes - I took a yogurt to go
For lunch they ate Mac and Cheese with grapes - I took another salad with a boiled egg (we ate all the spring mix!)
For dinner we had teriyaki honey pork chops with mashed potatoes and corn bread (a little heavy diet wise, but we each ate way less than we normally would have)

Today's menu:
Breakfast - Cereal - yogurt for me
Lunch - DW and the kids are going to the zoo, but last night we packed sandwiches and snacks for them to take (but an ice cream or two maybe purchased - its summer after all!) - ham and cheese for me
Dinner - Grilled chicken with vegetable medley

Looking to do as well as you all have done this week and finish strong.

I'd say one slip up in 4 weeks is something to be SUPER proud of!

Hooray on finishing the spring mix - another accomplishment for sure ;)

I think ice cream at the zoo in the summer is beyond worth "breaking the rules" for :)

Budget Bytes is a cooking blog. She posts recipes that are pretty inexpensive but impressive and delicious. She says how much the whole recipe costs to make and how much each serving is, and breaks down how much each ingredient is (even the salt & pepper!). She's got her recipes organized along the top bar of the site too, so if you have pork chops in the freezer, you can look at what she's done with it. I like a lot of her one-pot meals. I think this honey spice thing I did last night was the first dud I've had from her site.

Dragon noodles are one of our go to meals from Budget Bytes :) I definitely need to try out more of her recipes, I have tons of them pinned, but haven't gotten around to making them yet.
 
Son was begging for McDonald's after school yesterday, but I stayed strong and didn't give in (I totally would have in the past). I also talked to him last night about having different rewards for staying on the top of the behavior chart at school besides getting a happy meal. He was resistant, so today I'm gonna make a little "treasure chest" with things like make cookies with mom, run through the sprinklers with dad, stay up 10 minutes past bedtime etc see if I can get him excited about it ;)

In addition to avoiding the McDonald's situation, we also stayed on track everywhere else too.

Breakfast was cereal for the kiddos, bagels with cream cheese and jam for us.
Lunch was leftover vegetable rice soup that I had made for dinner the previous night.
Dinner I made a big pot of red chili posole thinking we could have leftovers for lunch today. Hubs loved it so much he had thirds, so there's only enough for one of us to eat it for lunch today :rotfl:

For breakfast today we all had cereal (down to 5 boxes left, sounds like a lot but I had massively stocked up during a $1.00 sale a couple months ago).

For lunch one of us will have the leftover posole, the other will make quesadillas or sandwiches. Son is at school, so he'll have his packed lunch like always. Daughter will either eat a little bit of the posole or a sandwich.
Dinner tonight I'm finally gonna try out the cilantro lime chicken as recommended by @jiminykrikkit :)

I did finally have to breakdown and go to the grocery store yesterday. We were out of butter, milk, eggs and fruit. The only additional thing I threw in the cart was a box of Eggos that my daughter asked for :)

We are doing a little incentive system here. DS can earn video game time for each page of his math packet that he completes. There is also a max of time allowed to play per day.

Today's been okay. We wound up getting lunch at the county fair, which is fine with me as its a once a year thing.

B: eggs and omelettes, sausages from the freezer, toast, cantaloupe. We were planning to make waffles, but DS wanted eggs. We will try the waffles tomorrow.
L: fair food
D: London broil (one down, one to go), broccoli, potato salad (this kills both the broccoli and potatoes, and uses some of the forgotten celery). Salad from the massive spring mix bin.

I could go for smores, but need more graham crackers so we can finish the marshmallows and chocolate bars (I know, first world problems...)

That's an awesome idea! Let me know how it works. We (DW) homeschools, and we are always trying to find ways to help motivate DD 7.

I would say just getting one box of Eggos is just fine! Who doesn't love those things. Gotta admit, they make for one of the easiest breakfasts ever, and who doesn't need at least one easy morning a week?

We have spent around $200 in the last 3 (didn't keep track the first week), and have saved $300 using our projected $175 weekly food budget number. This is going so well! Kids are enjoying eating at home, and so are we. Thanks again for all of the encouragement on this board.
 
Today I am making burritos with cream cheese, ground turkey (cooked first), tomatoes, shredded cheese and taco seasoning (wrap and bake at 350 until brown). I thought I had Spanish rice, but turns out I have cheese and broccoli flavored rice. It'll work. :rolleyes1

Tomorrow will be mac and cheese from one of those homestyle mac and cheese kits I found in the pantry.

I will have enough for us to have left overs for Monday. Trying to eat up what we have to before we leave.

I love air popped popcorn, too. I usually melt a little margarine (or butter), and add spices-chili powder + garlic powder+ a wee bit of cumin....mmmm. My kids have bought the popcorn 'butter salt', too, and sour cream and onion salt. I prefer the spices, though.

Breakfast: homemade Starbucks drink and toast with PB
lunch: lunch able with chips and celery
Dinner: left over Mexican

Tuesday:
B: muffin
L: up in the air
D: potato soup

Wednesday:
B: muffin
L: left over potato soup
D: spaghetti and meatballs/garlic toast

Thursday:
B: up in the air
L: left over spaghetti
D: beef tips and gravy

Friday:
B: last muffin

Breakfast and lunch are decided on the busy of my day behind the chair

Guys- I am almost in awe of how much food I still have. It's just me and DH and the house came with a chest freezer so I always buy stuff I can freeze or freeze left over stuff. It wasn't until I started this whole things that I realized how much food I've been hoarding. I'm glad this post came up so I can really focus and eat what I have before I just buy more.

dinner- DH is having some friends over and may get pizza. I am going to make a salad and have been debating trying to make buffalo eggplant. A friend of mine is a vegetarian and frequently uses eggplant to replace chicken- so why not try eggplant buffalo wings?! Though it might turn out terrible, we'll see.

lunch- I plan on making chicken salad from my left over chicken
dinner- ravioli from the freezer with the left over meat sauce from Sunday

We have those popcorn flavor seasonings too, but they don't seem to stick to the air-popped stuff. I'm going to try it out on the bagged kind and see. I love garlic salt on mine. I have some chipotle chili powder that I'm obsessed with, and I love cumin, so I may try your idea soon too! Also just thought about all the Mrs. Dash type seasonings I have too...

This week is up in the air still. I have a loose plan, but DH is probably going to be offshore for work all week. When he's gone, I tend to go as meatless as possible because it's cheap and simple and I like leftovers. If he's gone, I'm doing a chickpea curry with rice and pintos with rice for the week (using up any fresh produce as well). I'll save all the meals I have already planned and shopped for next week.

After all the conversations about farmer's markets, we went this weekend. We just purchased some beans, corn, and apples. This week we spent right at $120 again in total for our groceries. We are getting our routine down. We are, however, coming to a point where we are wanting to expand our menu some. We know what we have been eating the last few weeks works well budget wise, but our taste buds are starting to yearn for more variety. I am going to check out budget bytes and steal some of the recipe ideas from this thread for next week's menu.

I've been craving meatloaf and DS keeps asking for meatballs, but I'm waiting on a sale on ground beef or turkey. When it happens I'm stocking up! We only use the lean kind for stuff I can't drain the fat from, and it's about $5 a pound regular price.

Hope you find some good stuff on Budget Bytes! I'm making her Crockpot (not) refried beans tomorrow.

I love when DH brings stuff home from meetings and vendors. We get a lot of Chick-Fil-A nuggets and Panera bagels. Jealous of your upcoming vacay!
 
DH did end up going offshore, so dinners are cheap and simple this week. I don't think I need to cook any meat until Friday. I made butternut squash curry and rice and it'll last all week, plus the refried beans I mentioned above. I'll freeze most of the beans in small batches, but DS and I will have some this week too for lunches and dinners.

I have been saving veggie scraps in a baggie in the freezer. Today I poured that full bag and some water + salt & pepper in the crockpot and let it cook and wound up with 3 quarts of broth. That'll save about $6 worth of boxed stuff, plus my store doesn't carry a low sodium veggie broth.

Today's Menu

Lunch: half a grilled cheese and a tomato soup for me, peanut butter and jelly sandwich with toasted waffles instead of bread for DS (he was all over this!)
Dinner: butternut squash curry and rice for me, corndog, rice, and fruit for DS

Ack, sorry for disappearing again. It's my son's first year of school, and we've been playing around on finding a routine that really works for us. I think we've found it, so hopefully I'm back on regularly again :thumbsup2

Well, grandparents came to town once bearing the gift of happy meals AND one of his classmate's had a birthday and brought happy meals for the class, so I'm not sure if it being the replacement is working out well :rotfl:However, he did get very excited about drawing a reward from the box and liked the surprise factor of it, so I'm optimistic!

I'm way too guilty of buying the microwave popcorn, in fact when I did inventory on that part of the pantry I found 7 boxes from when I stocked up on a Mega sale :scared1:

Isn't it crazy what you've learned from this "project?" There are certain things (like the aforementioned popcorn) that we are still completely stocked up on. Yet, there are others that are completely used up and we were wishing we had more of around (such as ground beef/turkey).

After all the conversations about farmer's markets, we went this weekend. We just purchased some beans, corn, and apples. This week we spent right at $120 again in total for our groceries. We are getting our routine down. We are, however, coming to a point where we are wanting to expand our menu some. We know what we have been eating the last few weeks works well budget wise, but our taste buds are starting to yearn for more variety. I am going to check out budget bytes and steal some of the recipe ideas from this thread for next week's menu.

With projected temperatures here next week I plan to rely heavily on my crockpot to avoid heating the kitchen. That and it helps when dinner time rolls around and I feel too exhausted (or stressed!) to cook ;)

Are we doing this in September? I'm a little late to the game this month but now that we are in back to school mode, it's time to start getting back into a routine.

Well, tonight was going to be a frozen pizza, but then H was able to bring home some Publix subs that were leftover from a catered lunch meeting today!:-) I'm not sure what kind of subs they are, but hey, whatever works! I love Publix subs!:love: We also have cans of soup if need be.

Tomorrow will be the frozen pizza. Loose plan here as well. Dinners will probably end up being a random mixture of things. So ready to go on vacation!:yay:

LOVE when Hubs is able to bring food home from catered events!

I've been craving meatloaf and DS keeps asking for meatballs, but I'm waiting on a sale on ground beef or turkey. When it happens I'm stocking up! We only use the lean kind for stuff I can't drain the fat from, and it's about $5 a pound regular price.

Hope you find some good stuff on Budget Bytes! I'm making her Crockpot (not) refried beans tomorrow.

I'm down to keep going with this as long as possible. Maybe we can just change the thread name, so that we don't have to limit it to a specific month. Join any time!

I love when DH brings stuff home from meetings and vendors. We get a lot of Chick-Fil-A nuggets and Panera bagels. Jealous of your upcoming vacay!

My Hubs loves meatloaf, so I'm gonna have to test out the crockpot version. We are, however, waiting for a sale on ground meat as well. We ran out of it very early on and miss it like crazy around here!

DH did end up going offshore, so dinners are cheap and simple this week. I don't think I need to cook any meat until Friday. I made butternut squash curry and rice and it'll last all week, plus the refried beans I mentioned above. I'll freeze most of the beans in small batches, but DS and I will have some this week too for lunches and dinners.

I have been saving veggie scraps in a baggie in the freezer. Today I poured that full bag and some water + salt & pepper in the crockpot and let it cook and wound up with 3 quarts of broth. That'll save about $6 worth of boxed stuff, plus my store doesn't carry a low sodium veggie broth.

Today's Menu
Breakfast: scrambled egg, toast, fruit
Lunch: half a grilled cheese and a tomato soup for me, peanut butter and jelly sandwich with toasted waffles instead of bread for DS (he was all over this!)
Dinner: butternut squash curry and rice for me, corndog, rice, and fruit for DS
Snack: apple slices with cinnamon

I really need to start making it a habit to save veggie scraps to make broth. That and random bread pieces to make homemade croutons. Small savings, but a savings is a savings. Plus, it keeps things from going to waste :)
 
Tonight was indeed the frozen pizza that was supposed to be last night's dinner. I like to keep a frozen pizza on hand at all times.

Tomorrow I am making pasta with a roasted tomato Alfredo sauce. The sauce is somewhat of a cheat. I roast some tomatoes and then heat up a jar of alfredo sauce on the stove and let it simmer with the tomatoes. The best part is it tastes better as lunch the next day!:)
 
I go to Costco once in a while. Mostly for books, work clothes and other nick nacks. I don't drink enough milk to justify buying a whole gallon, or enough eggs before the spoil. The one cost cutter that Costco gives me? BACON. Lol. I've done pretty good this week. I had an emergency food run last night after my soup turned out not so great, and I had lunch out today. Not too shabby.

Lunch tomorrow will be pizza bagels and odds and ends
Dinner: Frozen pasta dish

Friday: left overs and probably dinner at my moms (yay free food!!)

Saturday: we are having a work get together pot luck since we are closing. :(
