Palo/Remy attire question

So my wife and I have done Palo dinner twice before but on our Fantasy cruise leaving this Saturday we are finally doing a brunch at Palo and the dessert tasting at Remy. I know Palo has a new dress code policy but I do not plan on wearing jeans. For dinners in the past I have done either a suit, or a shirt and tie but no jacket. Any recommendations for the brunch and dessert tasting. I feel like those are a touch less formal since they are in the morning/afternoon. I was thinking about going with just slacks, a button down or polo shirt.

Thoughts? Recommendations?
 
Dessert tasting at Remy is comparable in dress code to dinner at Palo (minus any jeans choice). Tie and Jacket are optional, but I would recommend either a button-down / collared shirt and nice slacks with a belt and dress shoes for both. Tie optional, but you wouldn't feel out of place. A short sleeved collared shirt or polo would be nice for Palo brunch, with the slacks/belt. You could do the exact same as Dessert at Remy if you want to dress it up a bit. For the ladies, a nice sun dress / skirt / nice pantsuit would be perfect. Hope that helps. My husband wore a long sleeved button up for both, with a tie - but he enjoys dressing up. He didn't need a tie for either one, but he looked nice!
