Palo hours - looking to go for dessert only.....

Short cruise (3-night) - we promised the kids that we would have dinner with them each night (early dinner) and go to the show before putting them in the club for the rest of the evening......so we were wondering if anyone went for Palo's for just appetizers and/or just dessert? I know we will be sorry we didn't have dinner there....just wondering if anyone has gone for a late night dessert? Does anyone know what time the latest seating would be - we have been told the late show ends at 9:30pm.....is that too late to go to Palos?
