Palo chocolate souffle recipe turned out great!

I finally decided to try this recipe. I made it for my DH on Father's Day. I'm a pretty good cook, although no Betty Crocker, and it wasn't that difficult. Only spilled boiling water on the floor once and spilled some cocoa. Oh, yea, and burnt myself on the oven. Ouch!!!! It took longer to bake than the recipee says(20 min.). It probably took around 30-35 minutes. The vanilla bean sauce was to die for!!! I was sneaking a spoonful here and there. It turned out very good. Between me, my DH and DS we downed all six of them!!!

Palo Chocolate Souffle
(From the Summer 2003 Disney Magazine)

3 T butter, plus more for greasing the souffle cups
6 T sugar, plus more for dusting the souffle cups
1 C milk
3 T flour
3 T Dutch processed cocoa
2 oz (1/3 cup) semi-sweet or bittersweet chocolate, melted
4 eggs, separated

Preheat the oven to 350 degrees and set a full kettle of water on to boil.

Butter 6 four-oz souffle cups and coat with sugar. Set aside. Bring the milk to a boil in a small saucepan. Meanwhile, melt the butter in a medium saucepan over medium heat. Add the flour and cocoa to the butter and beat with a whisk until it has a smooth, paste-like consistency. Reduce heat and let the mixture cook 1 minute. Slowly add the hot milk, whisking until smooth, then blend in melted chocolate. Set aside to cool for 5 minutes, then stir in egg yolks.

In a separate bowl beat egg whites until frothy. Slowly add sugar, 1 T at a time, until stiff, glossy peaks form. Stir a heaping spoonful of egg whites into the chocolate, then fold in the remaining whites just until combined. Pour the batter into the prepared souffle cups. Place the cups in a large baking dish and add enough boiling water to reach halfway up the sides of the souffle cups. Bake for 20 minutes. Serve immediately with vanilla and/or chocolate sauces. Serves 6.

Vanilla Sauce

1 1/4 C heavy cream
1/2 vanilla bean, split lengthwise
3 T sugar
2 small egg yolks

Bring cream and vanilla bean to a low boil over medium heat. Combine sugar and egg yolks. Add 2 spoonfuls of boiling cream to egg mixture and stir well, then pour back into the remaining cream and continue to cook over low heat, stirring constantly, for 3 to 4 minutes.

Chocolate Sauce

3/4 C boiling water
4 T sugar
6 oz dark chocolate, chopped
3 T cocoa

Bring water and sugar to a boil. Remove from heat and add chocolate. Cover pan and let sit a few minutes until melted. Stir in cocoa until smooth.

ENJOY! Now all we need is a romantic table for 2 and a sunset and ... PARADISE!!!
 
Agreed!!! I have made this twice since returning from our May 1st Eastern.

I haven't been able to find a vanilla bean in our stores here, so I substitute a tsp of vanilla extract. Still tastes great! And I found it takes about 25 min in our oven to finish cooking.

I found the vanilla bean in our local Food Lion store. They are expensive, $5.99 for 1 bean. You can probably find them in any gourmet food store though. I was going to use the vanilla extract if I couldn't find the bean. I'll have to remember to use 1 tsp. of extract.

I just finally figured out how to post pics in the sig line. I tried before but they turned out very small. Those pics were taken on the 3 day Wonder in April. Thanks for liking them. I am pretty proud of them myself!!!
 
I made this after going to Palo on May 23rd Wonder. Mine turned out great, also! We only got one each because there are six in our family. The whole family loved them. For some reason, eating Chocolate Souffle' made me feel better about not being on the Wonder.
I paid 11.99 for 2 vanilla beans at our local Kroger store. Maybe there is somewhere else that would have them cheaper.
I also loved the Chocolate Flan that we had at Palo brunch. Does anyone have the recipe to this?

I lost 17 lbs. for my 5/29 cruise. I'm sure some of the 6 lbs. I gained while on board is from eating 2(!) of these at Palo!!!!!;)

Oh well.......gotta get back on that treadmill so I can make this recipe!

Grumpy's mum made it for us at our summer reunion at OC. It was yummy and transported me back to Palos in an instant. oh wait maybe that was the Bahama Mamas I was drinking at the same time.LOL
 
Vanilla Beans

Don't even consider getting vanilla beans from your local grocery store. The quality is awful and the price is high.

Here are couple places to get vanilla beans online:

http://vanilla.com/ - A bit more expensive than Spice Barn, but they have a larger selection.

(Now remembering that we are out, and need to order some more soon)
 
I just placed an order with spice barn (thanks RickW.) In addition to the vanilla for this GREAT recipe (thanks wdwmom!), I found some spices my regular grocery store simply does not carry. Bring on the holidays...my kitchen is ready!
