I asked the question of a Palo server who knew me well enough to give me a reasonable answer, imho at least. He said it's because brunch is "All you care to eat" and dinner is not meant to be, although to keep guests happy and earn higher tips they don't generally refuse requests of those wanting more.

I know the two times we have eaten in Palo for dinner the waitstaff brings extra plates of food for the table for us to "try". It's always too much food

You can always tell them when you order that you do not want extra food, only what you order.

And if they still bring extra refuse it.

So don't complain about the amount of food! It's contradictory! :)
 
We have never had the servers bring us extra food at Palo, or even suggest more! I always wondered what the hoopla was behind Palo, because for us it just isn't that special.
 
if you look at the menu and let your server know you are unsure of choices, you might get all you the options you tell your server. Otherwise you most likely get only what you order.
