Paella-Bongos? RainForest?

We were told the paella at DTD is excellent but we've had trouble finding it on the menus. Someone said you have to order it in advance? Anyone know the details? Do you order when you make the reservation or a day or two before?
 
So I wonder how these people had it if it isn't available in Orlando? Maybe it's one of those dishes which are too much trouble so they have simplified and taken it off the menu.

If anyone knows another place at WDW to find Paella, let me know.

I've eaten at the Columbia in Ybor City and St. Augustine, and it is in my top 3 restaurants. The paella is just tremendous - and in several varieties too! I don't really like seafood, so I had one that I think was called a Farmer's paella or something - all meat cuts and no seafood. But the traditional paella is there as well. Columbia is a Florida institution and just wonderful/ Go if you are able.
