Packing Suggestions?!?

Hi all! My family is traveling down for a week in June, including my DD (6) and DS (2), and I'm wondering what suggestions anyone has for packing. We will be driving our own car down so that's sort of a plus. I'm a notorious over-packer (lol) but I don't want to spend time doing laundry on the trip unless it's absolutely necessary. Does anyone have any tips/tricks on what to bring for little ones? I've done research on packing lists, but I'm open to any and all suggestions! TIA!
 
2 full outfits per day for the 2 year old if they are out of diapers. You probably won't need that many if they aren't potty trained or training. But if they are expect 10x the number of accidents they have at home.
An outfit per day for the older child, with a few spares (I usually do 1/2 the number of days we're staying)
At least 2 pairs of comfortable shoes
I like to pack each outfit, including socks, underwear and accessories in Ziploc bag to make getting ready as quick and easy as possible
 
We brought a spray bottle with a fan attached to it and found that really helpful in the heat! We also brought a clear plastic shower curtain. We clipped it to our double stroller and it covered them during the quick rain storms. We then used it to sit on during parades since the curb gets quite hot in the sun.

We packed one outfit per child per day + 2 extra. We also brought 2 bathing suits each, since the one from the day before never seemed to be dry enough.

Snacks is an obvious one. Things that don't get too messy or sticky. Goldfish, peanut butter crackers, etc. We get food delivered from WeGoShop so we had the Honest Juice boxes that my kids thought was a special treat (they don't get juice at home).

Ziploc bags....especially for the extra/leftover candy or special treats from the bakery.

a second vote for outfits in Ziploc bags labled with each childs name. makes it easier grab an extra outfit for park bag. if younger is still in diapers would pack a diaper in each bag and bag comes in handy to put wet/soiled clothes when changing
 

We pack hats, sunglasses and ponchos for everyone. We pack 2 sets of ponchos each. We go in August when it rains a lot and let one set dry overnight and take the other set. We don't like umbrellas - they get in the way. We too have fans with sprayers - they really help. We use ziplock bags for our phones on the water rides. It helps.

We drive and over pack as well. We stop at the Walmart on the way down to pick up cases of water and anything else we need.

We bring a collapsible drying rack - there is never enough room to hang up all the damp, wet, stained clothing 4 people generate, a small step stool so kids can wash hands in the room without our intervention, and 4 plastic cups for use w/ brushing teeth (different color for everyone).
 
We also did ziplock with kids name and the date- their outfit for the day was in it.
We also had extra ziplocks for random stuff we picked up in the park or leftover foods.
We packed 1 set of clothing for each day plus 2 extras. 2 sets of shoes each + swim gear. We had ponchos, sunscreen and bug spray, baby wipes all in one large ziplock because of bag check in each park.
We went to Costco and grabbed all our foods for breakfast and in park (we packed a lunch in with us each day).
We use clicker style sharpies attached to their autograph books so we did not lose them.
We also had a towel to toss over the stroller, use for misc seating, etc.
 
Since you are driving, you can pack a "just in case bag". We go in winter so for us it is those extra heavy coats and things we MIGHT need but can stay in the car unless we do. We sometimes add an extra extra pair of shoes just in case too. My nephew "lost " his shoes once. Still have not figured that one out but it's something to think about. We love our over the door shoe hanger to organize the bathroom. We always packed room toys and even bath toys when our boys were little. They needed a bit of down time and bath time gave me a bit of time to prepare for the next day.
 
My husband preferred when I brought collapsible bins with us that we used in the car and in the hotel room. In the car, one was used as the snack/wipes/front seat electronics holder. The second one was in the 2nd row for electronics, toys, etc. Helped keep the clutter down in the car and made it easier to unload. We then used them in the room to hold things that would otherwise be strewn about. I have the pottery barn kids ones because I got them for about $5 but I think they sell them at target/Walmart.
