So I'm making ADRs bright and early Monday morning. ;)

I've decided on everything except our arrival night dinner. I realize that regardless of the restaurant, travel will be involved. I also realize these restaurants are completely different. Anyway, I'm really looking for your opinion of the best overall experience restaurant from this list. (never been to any of these)

-Flying Fish Cafe-love the atmosphere and location; make a meal on appetizers and desserts
-Boatwright's-like the idea of exploring a new resort; close proximity to Downtown Disney where we'll be earlier that day and later that night
-The Wave-like the atmosphere; food looks great
-California Grill-nervous that when the shades are drawn, the view will be ruined (we've already dined on the 95th floor of the John Hancock Center so we realize the view will be great); make a meal on appetizers and desserts

A few points about the places you are considering.

Flying Fish - really, really good restaurant. Good food, service. Pricy (as you probably know)
BoatWrights - perhaps not as "close" to DTD as you might think. The boat is convenient, but it does take a while. I suspect you could get to/from DTD from many of the other resorts by bus in the same amount of time the boat will take you. Our actual dining experience at BoatWrights is many, many years ago so I can't comment on the food.
Wave - I've got no experience there, but being at the Contemporary isn't as big an attraction if you can't actually see anything from the restaurant.
CG - Great view. Always felt the food was over-rated.

Where are you staying?

If I was downtown, rather than Boatwrights, I'd probably eat at Raglan Road.

Boardwalk Area - Kouzinna

The wave - IS yummy. CG - it's the view but boy you'll PAY for it.
 

I agree with PP about Flying Fish Cafe based on the list you provided. Keep in mind one thing - if you're using Disney transportation between the Boardwalk area and DTD, it is a long ride both ways. Don't underestimate how long it will take, especially FROM DTD to Flying Fish. It has taken us over an hour on the bus in the past (one way).

We love staying at the Epcot resort area with only ONE exception - the bus transportation to and from DTD.
 
Are you flying in?

The reason I ask is that you might want to avoid a restaurant that requires a credit-card guarantee (and has a no-show fee), just in case your flight is delayed.

However if that doesn't concern you then any sound good! Agree POR just to eat seems a bit like going out of the way, though.
