Other than reservations for dinner ...

Not sure what you mean, but if you want a character breakfast, you need to make an ADR for that...... We usually do only one sit-down meal each day, if that helps any.

Other than meals, if you want to do any tours or cruises, you need to make reservations for those as well.
 
I'm sure other dissers will know more, but here's what we did:

Divequest (in tank at living seas - fabulous!)
Fantasmic dinner (we did Brown Derby and then had a seat at Fantasmic - really worth it)
Horse and carriage ride (at some resorts)

and what we want to do next time:
Segway tour
Keys to the Kingdom (I think that's the name)
Richard Petty driving at MGM

Are you travelling with small children? If so, then there are a ton of children's activities that, if you choose to send your kids to them, you will need to reserve ahead of time.. from the Pirate's Cruise and Princess tea at the Grand Floridian, to the Albatross Cruise at the Yacht Club. I believe this site has more information on children's activities.. just do a search.

Also, are you interested in seeing the Cirque De Soliel show (La Nouba) at DTD? If so, you may wish to get those tickets ahead of time as they do sell out sometimes.
 
OMG it was so fun! We were taken behind the scenes and taught how to behave like a CM as guests don't know you aren't CMs. Planned our our time, learned about the tanks, fish, etc. Then we put on shortie wetsuits and met to go to the top of the tank platform where they had gear all set up for us. We got to interact with the guests watching (really hamming it up), got "nibbled" by fish (can't remember which ones), swam around for what seemed like minutes cause the time just flew by, and just had a blast.

Also if you have fam in the restaurant the underwater videographer will get them and you together on both sides of the glass for pictures. I'd do it again in a heartbeat! We got a tshirt (cool one), certificate, etc. We didn't buy the video as each person was only on it about 2 seconds total and the rest was PR for Dive Quest. It was fun to watch (they show it to you after the dive) but maybe a different videographer would have done better. All in all, it was truly a magical experience.
