Other attractions beside Theme parks

We would like to spend a week or longer explore Florida beside just the theme parks.. What is great to do and see?
 
We are looking into Gatorland, air boat ride and wild florida...we would like to see the real florida as well.
 
Gator land is really fun. You could check out the aquarium where the dolphin from Dolphin Tale lives. I think it's in Clearwater.

There is always the ocean.

Madame Tussauds Wax Museum
Gatorland
Wild Florida (animal park and airboat ride)
Wild Willy's (airboat ride)
Showase of Citrus (monster truck ride through an orange grove)
Jet skiing on the lakes (through Makaio Watersports)
Beaches (Daytona and Cocoa are only about an hour away)
The Outta Control Dinner Show

( A ) Airboat Rides at Midway on Hwy 50 AND pay a visit at Fort Christmas ( Fort & picnic area )

( C ) Drive to Hwy 192 Go EAST to St Cloud After Last Traffic Lights TURN LEFT at Ashton ( Gas Station { Shell ? } )

Turn onto Hwy 532 Till you join Hwy 520

Choice Turn Left for Home OR Turn Right for Cocoa Beach & Ron Johns Surf Shop.

Return At Ron Johns Turn Left for Hwy A1A for Port Canaveral And join Toll road Hwy 528 back to Disney.

( D ) Drive to Hwy 192 BUT Turn Right ( West ) to join Hwy 27 ..... North to Clermont

Stay on Hwy 27 . look for turn Right to Hwy 19 to Howey -in -the- Hills ( Have a look at The Mission Inn Resort ( on Left ) )

Drive to Tavares & on to Mount Dora Back Via Apopka

We always stay at either Indian Rocks Beach or Siesta Key Beach for a few days. From either, you can drive to Venice and visit the beaches and search for fossilized shark teeth. It is really fun. IRB is cheaper and closer to Clearwater Beach, Siesta Key Beach is expensive. But both are fun. I have seen so much marine life (even sharks and mantas) on our trips. Dolphins are common too, much more common than sharks thankfully!!!! I have only seen one shark and probably 20 dolphins from that area so not trying to freak you out, and the shark was only 2 feet long or so.
