I came across these recipes and thought I'd share them since there is only one more week of summer left!

For those of you who haven't had these (mojitos) they are terrific. They're the "hot" drink right now. If you don't like mint, you probably won't like these though.

The Smoothest Mojito

In a pitcher (at least 2 qt.), combine 2 cups light rum, 1 cup mint syrup (below), and 1 cup lime juice; add about 2 cups ice cubes. Pour into ice-filled glasses and garnish with mint leaves. Makes 6-8 servings.

Mint Syrup: In a 1- to 2-quart pan, combine
1 1/4 cups lightly packed rinsed fresh mint leaves, 1 cup water, and 1/2 cup sugar. Stir over medium heat until sugar is dissolved and mixture is simmering. Remove from heat, cover, and let stand 30 minutes. Pour through a fine strainer into a small pitcher or bowl; discard leaves. Makes about 1 cup.

Pineapple Shake
About 3 cups fresh pineapple and juice
2 tablespoons chopped peeled fresh ginger
1 pint vanilla ice cream
1/2 cup rum (optional)

Put pineapple, juice, and ginger in a blender and purée. Add ice cream and whirl until smooth. Add rum and blend. 4 servings

Ruby Grapefruit Margaritas

Combine 3 cups ruby grapefruit juice, 2 cups tequila, and 1 cup triple sec or other orange-flavored liqueur. Chill until cold, at least 1 hour, or up to 1 day.

Pour about 1/4 cup sugar on a rimmed plate. Cut a ruby grapefruit in half and rub rims of double old-fashioned glasses (8 oz.) with cut side of one half to moisten, then dip glass rims in sugar to coat.

Fill glasses with ice cubes. Pour grapefruit margaritas over ice, taking care not to disturb sugared glass rims. Makes 6 to 8 servings.
 
Those Mojito's sound yummy.:D I will have to try those this week!!
 
They sound very nice! But I can't drink rum or anything with a corn basses sweetener anymore :( Boo hoo!

I only know one recipe...Take a glass, add ice, pour Baileys! A simple three step process!:p:p

Mmmmmmm--mojitos!!!! Love Love Love them.

I will be partaking of one of my favorite drinks this coming weekend, while tailgating before the Jimmy Buffett concert.

Malibu Rum (coconut flavored rum)
Pineapple juice
Couple of scrapes of fresh nutmeg
Crushed Ice.

Yummy. Like a Pina Colada without the cream, a little less heavy.
 
Hummmm, they sound sooooo good! I do love rum, but we don't see eye to eye anymore.

Those mojitos are good. I had one a month or so ago at our neighborhood backyard party. I can't remember what they called them, and then again I can't remember much at all from that party.LOL The pineapple shake sounds good, too! But rum, optional?!? C'mon now.:teeth:
 
I forgot to mention some of my fav's: Mudslide, a little Kahlua, a little Bailey's, some vodka, a couple of scoops of vanilla icecream, swirl some chocolate syrup around the inside of the glass before you pour drink from the blender, and top it with whip cream. YUMMMM!!! Of course, no calories in that. Another one I like is to add some Midori to my Margaritas to make them a melon Margarita. Just a different twist!
 
One of my favorite desserts is Kahlua over ice cream. Hummmm. I might have to have some tonight. :teeth:

I had an awesomely huge margarita Sunday night at Chili's. It was a Chambord one. Went down real easy and DH had to drive home. I'm don't usually drink that fast but had to finish it and it was in a glass the size of a super sundae at Friendly's.:rolleyes:

Very yummy though.
 
Beanie will like this -- Sunday I had my first Irish Mudslide. Yummy! I ordered it after dinner and then I wished I had ordered one instead of dinner! Really really good.

I have to have a Dr Pepper to wake me up in the morning ... I'm thinking maybe a Cafe Toledo would be a much better choice. I'm generally pretty cranky first thing in the morning -- not a morning person at all -- that drink would take of my being cranky! Might have to give it a try!
 
though im not an RP bad girl, i do have a shot :eek: recipe for you... its 2/3 baileys, 1/3 white creme de cocoa, and sprinkle with cinnamon. tastes exactly like a cinnamon roll. its the only drink ive ever had where the after taste is the best part :)
