I like to make chicken noodle soup with cheese tortellini instead of regular noodles. Yum!!
 
So many tasty looking recipes in this thread! Can't wait to try a few out soon.
 

Fall has recently become my favorite season, and I totally adore all of the awesome soups that comes with it! I'm dying for a squash soup, but don't have a recipe. Anyone have a tried and tested one?
Fall is my favorite time of year--and, as Pete said, the BEST time to visit WDW. I'm with you, too--let's see a squash recipe!

Slow-Cooker Chicken Tortilla Soup

INGREDIENTS:
1 pound frozen chicken
1 (15 ounce) can whole peeled tomatoes,
mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile
peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
tortillas chip strips

(for serving: lime juice, avocado, sour cream - use all, some, or none - this recipe can be spiced up or down depending on your taste. The recipe is very forgiving. Have fun and spice it up!

DIRECTIONS:
Place frozen chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 8 to 10 hours or on High setting 4 to 6 hours. Shred chicken once it has cooked. To serve, sprinkle tortilla strips over soup and serve with lime juice, a tsp of sour cream, or chopped avocados.
 
I LOVE the tomato soup at the Earl of Sandwich. Does anyone have a recipe that tastes similar to that soup? I've actually never made tomato soup from scratch but would love to try it.
 
Our soup is the homemade version of LC's Cheddar Cheese.

I also swore up and down growing up that my mom made the best chili. When I was finally old enough to cook and asked how she did it she replied "Uh, two cans of beans, a can of Ro-Tel, and a lb of seasoned ground beef".

Easy but I guess so much for "secret" recipes!
