OT: Mac and Cheese Recipe?

Ok so I need to make Mac and Cheese to bring with us on Christmas to my cousins house. I need a recipe that can be made ahead of time, that travels well (we have a 2 hour drive) and that can be reheated when we get there. And yummy of course.

I use a very simple recipe:

1 lb. elbow macaroni
2/3 cup of Velveeta cheese - cubed into small bits
6 oz. Sharp cheddar cheese - grated
4 oz. Monteray Jack cheese - grated
2 eggs - slightly beaten
1 cup of 1/2 and 1/2 (can be fat free or lowfat if you like)
2 TBSP butter - melted
Bread crumbs or fried onion pieces

Preheat oven to 350. Cook the macaroni to slightly al dente. Drain when finished and return to large pan. Stir in cheeses, butter and milk. Keep stirring until all has melted. You may need to turn the burner back on for a moment to warm it up enough to melt completely. When it is completely melted add teh eggs and stir again. Put into a large sheet cake pan. (no need to spray). Put bread crumbs or fried onion pieces (my families favorite) over the top and bake. Can be refrigerated and baked later or right away.

Ok here's mine,it seems to go over well. This is a crocpot recipe, I have cooked it on low for 2 hours at home then transported it to another location and heated another hour on low.

1 lb cooked elbows
can of evaporated milk (12oz I use Fat Free)
1 cup milk(I use skim)
1/2 stick butter(cut into sm pcs)
3 cups shredded cheddar
1 can cambells cheddar cheese soup
1 egg (or not, sometimes I use eggbeaters)
paprika

Place all ingred. in croc, then cooked elbows, mix well, sprinkle paprika. Cover and cook on low for 3 hours. I do stir mine 2 or 3 times during cook time.
 
I usually make the alton brown recipe but it hasnt been coming out good enough.. so the other day I made it the way my mom makes its

boil 4 boxes of macaroni ( each box was only 8 ounces) cook until al dente and drain

in a small sauce pan fry half an onion with a stick of butter. toss with macaroni. add salt and pepper to taste..put it a casserole dish. mix with 2 packages of shredded cheese and 1 cup of milk. Top with a package of crushed ritz crackers and 1 stick of melted butter.

bake for about 40minutes at 375
 

this is my grandmothers receipe:

1 box ziti
1 can tomatoe soup
approx 2 table spoons butter
approx 1 tblsp flour
1 cup milk
1 stick cracker barrell xtra sharp cheddar cheese
optional bread crumbs

melt butter in sauce pan, add flour (this makes a thickener) stir for a minute or 2
add can of soup and milk, stir and bring to a boil
slowly add cheese (I cube the cheese and put about 6 pieces in at a time)

This will come to a boil when it does, pour over cooked pasta. Mine normally ends up in a 9x9 inch stone.

I normally start the water for the pasta when I put the butter on.

Optional sprinkle w/bread crumbs.

I put mine in the fridge if I'm not ready to eat.

Once ready, bake at 350 for 25-30 minutes.
