Cooking OT: I bought mushrooms on sale-what do I do with them?

I have 3 packages of fresh mushrooms ($.99 per pack-really cheap around here). What should I do with them? I had defrosted chicken breasts to make dinner. Can I somehow combine these two into a yummy and easy dinner dish?
 
That's what I was going to say:

Season chicken with seasoning salt and italian herbs, cook in pan, remove and keep warm.

Saute onions, mushrooms and garlic until tender, and moisture is released and evaporated. Add in a mix of 1/2 chicken broth and 1/2 dry marsala (or red wine or sherry if you don't have marsala), simmer until reduced by at least half. Add in chicken, cover to coat.

To make a creamy version, you can mix in a splash of cream just before adding chicken. If you have any fresh parsley, sprinkle over the chicken and mushrooms and serve.
 
Yup, that was my first thought...chicken marsala!

For more ideas check out allrecipes.com. In the search box type 'chicken mushrooms'. You'll get a whole bunch of ideas. (Here's a tip; once you get search results sort by 'rating'. I only bother with 4 and 5 star dishes. And read the reviews, there are often tips in there for making the recipe as yummy as possible.)
 

Or easier version of that

Cut up your chicken into chunks- take the mushrooms and if they are larger quarter them - they should be bite size.

Put about 3 TBS olive oil in pan. add some garlic- add your chicken saute- add mushrooms when chicken is almost done- saute add a dash of oregano and pepper
serve over pasta with plenty of cheese.

I also usually add in chopped peeled eggplant at the same time I throw in the mushrooms but you can make it without(it just gives it a little different texture)

OR

slice and saute mushrooms-
brown chicken cutlets in a little butter
Top chicken cutlets with the mushrooms and top with cheese(I use fontina or mozzarella or whatever cheese I have in the house put a little white wine in the pan and put it in the oven to melt the cheese on top.

We like them sauted in a little non-butter substitute and used as a side dish. Or make a chicken salad with sliced grilled chicken and fresh mushrooms.
 
Hey, I just checked my pantry and I am out of wine completely. Can I use beer? I know it won't be "marsala", but how do you think it would taste?
 
I used to make a casserole with cubed chicken, mushrooms, cream of whatever soup, milk, shredded cheese, & topped with crumbed Ritz that was really good.

Chicken & mushrooms are also good in strombolis. Add some sun-dried tomatoes & spinach, yum!
 
OK here's my report on what I did. Salt pepper and garlic on the chicken breasts. Sear them in a little bit of oil in a frying pan. Take out chicken into baking dish. Put sliced mushrooms into pan and saute. Add beer (half bottle-drink the rest). let alcohol burn off. Add tomato sauce (had half an open jar of spaghetti sauce in the fridge), bring to boil. Pour over chicken and bake for 15-20 minutes (until chicken not pink). Serve over spaghetti (rice would probably be good too).

It was FABULOUS. The kids loved it.
 
apple or grape juice will be fine instead of wine.

My MIL brought back a load of mushrooms from Hungary which her relatives had picked and dried, and they were great added to soup, pasta, casseroles etc. (like porcini but free :rotfl: )

I might also do sausage stuffed mushrooms. :)
