OT: Candied Nuts recipe

I'm curious about this, too. I've gotten lots of recipes - mostly from online sites - for candied or sugared nuts, but NONE of them ever say exactly what kind of nuts to use.

I mean - roasted or raw? (Not whether to use pecans, cashews, etc....:lmao:)

I tend to buy my nuts at Trader Joe's - they have the best prices and quality. They stock both raw and pre-roasted ones. But, short of experimenting - which could get pricey! - with cooking/baking candied nuts, I am also hoping DIS folks will come to the rescue.
 
I had plans to make some candied nuts for this holiday season, and the recipe I printed to try was:

CANDY CINNAMON NUTS

1 c. granulated sugar
1/2 tsp. cinnamon
1/8 tsp. cream of tartar
1/4 c. boiling water
1 1/2 c. walnuts
1/2 tsp. vanilla

Mix first 4 ingredients. Boil to 246 degrees on candy thermometer or until a little mixture forms a firm ball when dropped in cold water. Add vanilla and nuts; stir until mixture sugars on nuts. Turn onto cookie sheet and separate nuts. Makes about 3/4 pound. Can substitute mixed nuts or raisins in place of walnuts.

To make quick candied walnuts (I use them in salads and process them in dressings): toast walnuts; mix toasted walnuts with enough maple syrup to coat; bake in 250/300 degree oven until carmelized. Just keep watching them. I usually do 275 for 8 minutes depending on how thick the syrup is.
 

There are slight variations.

Candied Nuts
3 cups walnuts or pecans ( I prefer pecans)
1/2 cup sugar
1 tsp cinnamon
pinch of salt
1 egg white

Preheat oven to 250. Mix sugar, cinnamon and salt in small bowl. In large bowl whisk egg white until frothy. Add nuts to egg white and mix to coat. Add sugar mixture to nuts and mix until coated. Put nuts in single layer on cookie sheet and bake for an hour. Every 15 minutes remove nuts and stir. Remove from oven and let cool. Coating will crisp up as nuts cool

Glazed Cinnamon Almonds

1 egg white
Pinch of salt
1 1/2 pounds (about 3-3 1/2 cups) almonds
1/2 cup sugar
1 teaspoon cinnamon
Butter

In a medium bowl, beat the egg white and salt until soft peaks form. Pour the nuts into the bowl and stir to coat well. Combine the sugar and cinnamon, and sprinkle over the almonds. Mix well. Turn the mixture out onto a buttered shallow baking pan, like a jelly roll pan, and spread the nuts out evenly. Bake at 300°, stirring occasionally, until crisp, about 45 minutes.

Spiced candied nuts

1 - 12 oz can evaporated milk (Not Condensed)
3 cups sugar
4 1/2 tsp cinnamon
1 1/2 tsp vanilla
2 tsp salt
9 - 10 cups whole nuts --- Almonds, Pecans or Walnuts
or mixed

Mix milk, sugar and cinnamon - Bring to boil and cook
to soft ball stage (234 - 238 degrees on a candy
therm) - Stirring constantly. Remove from heat - add
salt and vanill, beat until well mixed. Pour in all
the nuts and mix till well coated. and mixture is
creamy.

Spread on a couple layers of waxed paper - Try to get
into a single layer, cools quicker that way. As it
cools, turn over so the other side cools too...them
break into bite size pieces Or separate individual
notes.

If you use less nuts - you will have more sugar
mixture and the mixture will set up more like a
praline candy. More nuts will make the sugar a light
glaze around the nuts. Either way is fine, just
depends on what you have on hand.


Candied Pecans
• 3 egg white
• 1 cup packed brown sugar
• 2 tablespoons ground cinnamon
• 1 teaspoon ground cloves
• 1 teaspoon ground ginger
• 1 tablespoon vanilla extract
• 1 pound pecan halves
• ½ t salt
DIRECTIONS
1. Preheat oven to 300 degrees F (150 degrees C). Coat a baking sheet with cooking spray.
2. In a large bowl, beat egg white until foamy. Stir in brown sugar, cinnamon, cloves, ginger, and vanilla and salt. Add nuts, and stir to coat. Spread evenly onto prepared pan.
3. Bake for 30 minutes, stirring occasionally, or until well toasted and golden brown. Remove from oven, and cool completely. Store in an airtight container.
 
How long can you store these? I mean if your family doesn't figure out where you hid them.;)

not sure about the other recipies but if you make the one that I got from recipies. c o m you can place them in a ziplock bag for several weeks and they will be fine and when you want some don't forget to heat them up a bit in the microwave they are really yu,mmy when warm :thumbsup2
