Opinions please - western shore excursions

We've been on the Eastern Caribbean cruise, but have never been on the Western before. We are going this coming January and would like some opinions on the shore excursions we're thinking about.

Key West: Butterfly and Nature Conservancy, or Pirate Soul and Shipwreck Historeum Adventure

Grand Cayman: Nautilus Undersea tour, or Stingray City Observatory and Island Tour. Would also be interested in opinions on the Seaworld Explorer.

Cozumel: Xcaret Eco Archaeological Park

We will be a party of 5, 3 adults and 2 kids, DD10 and DS6. We've got 2 non-swimmers among the adults, so they're not terribly keen on snorkeling and such.

Any other suggestions on shore excursions are also welcome.

We found the most fun thing ever in Cozumel, I found it online. Its an American run miniature golf place. Its cheap fun and a 4 dollar taxi ride...its an 18 hole course with lots of beautiful plants and wildlife..we had turtles and iguanas stop to play with us and they have a special animal their but i forgot the name. they give you a little radio and if you want a snack or drink you call and they bring it to you..they are so nice...if interested, just google cozumel miniature golf. there is only one and so worth the money!

We did the Tulum Ruins excursion out of Cozumel. It was wonderful. It takes pretty much the whole day but you stop once on the way down and once on the way back at little roadside shops. There are also shops at Tulum.

Our children were a bit older (teens) but all of us were VERY impressed and learned so much about the Mayan culture. It was one of our favorite excursions eastern or western. There is also a beach accessible only from the ruins that was really beautiful.
 
Thanks CruzNMom for the feedback. Just a quick question...are there any problems with taking pictures at any of these places? I know that we had some trouble with the "native americans" in New Mexico a number of years ago. They didn't want you photographing their "sacred" sites. It really frustrated me being told I couldn't take pictures. ::MinnieMo
