Our 180 Mark is coming up but we won’t know until right before our trip if we are 4 or 5. Is it going to be a problem if we show up for 5 party ADRs with 4 people?

No. You are much better off over-estimating how many guests than under-estimating. Put in 5. You won't be penalized.

Definitely go with 5. It is showing up with a +1 that might be problematic. Showing up with 1 less is no big deal.

We booked ADRs for 3 for our trip a few years ago, and the 3rd person wasn't able to come at the last minute. No problems.
