I only have one day in the Orlando area on an upcoming trip -- I plan to visit only one park at this point. However, what if I change my mind once I've entered the chosen park? Can I get the hopper option added after the fact?

Yes. We did this once two years ago. Went to AK for the day, and when it closed about 6pm, we added the hopper to go to MK until midnight. It's expensive, however.
