My family and I will be 1.5 away from Orlando in June. My 2 year old niece is obsessed with Minnie Mouse so we have been thinking about driving over for one day at Magic Kingdom. Where is the best place to get 1 day tickets? What should our day look like if the most important thing is to meet Minnie? Thanks for all of your help!

Why not do a character meal at Chef Mickey's (Contemporary resort)? If she is really wanting to meet Minnie, it's guaranteed at the meal. In the park you may have to wait for long lines to see her if she's making an appearance.
It's a bit cheaper than one day park tickets & you get a meal (breakfast is probably the best but they do a brunch as well). Plus you can hotel hop on the monorail after to the other lovely hotels in the area.
If not, you can get tickets at the gate, at any Disney store or on line at Disney's web site.

I too was thinking Chef Mickey would be perfect to meet Minnie! My children have always loved the breakfast (it goes until 11:30 so you would not have to be super early risers to get there)...nothing beats Mickey waffles and meeting Mickey/Minnie at the same time!

Otherwise, I don't believe there is anyplace that will discount a 1 day ticket so you could just purchase them directly from Disney. Sorry, I can't help with a meet and greet for Minnie in MK, we have only seen her in the parades while we were there.
