We love, love, love Boma. A great mix of interesting and "different" foods with some more familiar to the American palate. You'll eat well there! 
I haven't done Be Our Guest yet (munchkin with a stomach bug meant we cancelled on our last trip), but it's on my to-do list, and from what I've heard, you can't go wrong there.
I'm probably in the minority, but I was not at all impressed with 'Ohana. We did enjoy our meals at Kona Cafe, but don't have any interest in going back to 'Ohana. I wish you better luck than we had!
We've done San Angel Inn, rather than La Hacienda. We always enjoyed the food and the soothing atmosphere of the Inn. Especially on a hot, sunny day!
I'd imagine that the food is just as good, if not better, at La Hacienda de San Angel. Hm. Maybe I should put that on our to-do list for our next trip! 
Like you, we don't really look for Italian on Disney trips - as NYers, we know we can get the same food (or better) right around the corner when we get home. As for other places we've enjoyed and would go back to - it's been a few trips, but we've previously really enjoyed Restaurant Marrakesh in EPCOT. Tasty Moroccan food, and the belly dancer puts on a good show. Les Chefs de France, also in EPCOT, is a former favorite as well. We LOVE doing breakfast at Tusker House - though you're looking for dinner plans, we always make a point of breakfast there because it's worth it. And filling enough that a light dinner is appealing at the end of the day! We've also had good experiences with Yak & Yeti in Animal Kingdom, and with Rose & Crown in EPCOT.
But if your list is already full of meals that will make you happy, I say run with it - and enjoy your trip!
