On a lighter note....meatloaf!

I commend you guys, no one started to write the lyrics to

Bat Out of Hel I thought you were talking about the rock star Meatloaf when I saw the post!

LOL When I clicked on the topic I thought it was going to be abotu the singer too
 
I got this recipe from the Food Network website, and we LOVE it! The tomato gravy is so good.

Meatloaf:

* 1/2 cup dry bread crumbs
* 2 tablespoons extra-virgin olive oil
* 1/2 medium onion, diced
* 2 cloves garlic, minced
* 2 teaspoons dried oregano
* 2 1/2 teaspoons kosher salt
* 1/2 teaspoon freshly ground black pepper
* 2 1/2 pounds meatloaf mix (or pork and beef combo)
* 1/3 cup grated Parmesan
* 2 teaspoons Worcestershire sauce
* 2 large eggs, beaten

Gravy:

* 1/2 medium onion, diced
* 3 cloves garlic, smashed
* 1 teaspoon dried oregano
* 2 tablespoons extra-virgin olive oil
* 1 tablespoon unsalted butter
* 3 tablespoons tomato paste
* 1 bay leaf
* 1 (15-ounce) can low-sodium chicken broth
* 1 (15 1/2-ounce) can crushed tomatoes
* 1/4 cup grated Parmesan
* 1 teaspoon red wine vinegar
* 1 teaspoon kosher salt
* Freshly ground black pepper

Directions

Preheat oven to 350 degrees F.

Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the olive oil, onions, garlic, oregano, salt, and pepper to the skillet and cook until onions are tender, about 8 minutes. Let cool slightly. Add the onions to the bread crumbs along with the meat, cheese, and Worcestershire sauce. Toss and mix gently. Add the eggs and stir to coat the meat completely.

Transfer to a foil-lined sheet pan and gently press into desired shape. Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.

Tent the meatloaf with foil and let rest for 15 minutes while you make the gravy (or you can make the gravy while the meatloaf is baking).

Gravy: Cook the onions, garlic, and oregano in the olive oil and butter in a large skillet over medium-high heat until browned, about 6 minutes. Add the tomato paste and bay leaf. Stir until paste turns brick red and garlic is fragrant, about 3 minutes. Add the chicken broth and crushed tomatoes. Bring to a boil over high heat. Reduce heat to maintain a simmer and cook sauce until it thickens, about 5 minutes. Whisk in Parmesan cheese, vinegar, salt, and pepper. Discard the bay leaf and transfer the sauce to a gravy boat. Slice the meatloaf and serve with the gravy.
 
This is so funny! We were just talking about our meatloaf recipes at work! Here is one of my favorites.

Honey Barbeque Meatloaf

1 envelope dry onion soup mix
1 egg
1/2 Cup oats--quick cooking
1/3 cup honey flavored BBQ sauce
1/4 cup chopped onion
2 Tbs brown sugar
1 Tbs worcestershire sauce
1 Tbs prepared mustard
1/2 Tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
1 pound ground beef

Ketchup

In a large bowl, stir together soup mix, egg, oats, bbq sauce, onion, brown sugar, worcestershire sauce, mustard, garlic powder, salt, pepper and chili powder. Add beef and mix well. Press into an ungreased 8 X 4 loaf pan. Bake at 350 for 1 hour. Top with ketchup. Bake 5-10 minutes longer or until meat is no longer pink and a meat thermometer reads 160. Let stand 10 minutes before serving (if you can wait that long)

This has a good texture and is great for sandwiches the next day. I tend to use larger amounts of spices than what is listed.
 
Mine is pretty easy.

Ground meat
Onion soup mix
1 egg

Mix all together. Put in a greased loaf pan. I usually will top with sweet baby ray's sauce when I cook it.

Meat loaf skeeves DBF out so I haven't made it in a while. Something about the word meat loaf grosses him out.

I use jack daniels chips for smoke. It is fantastic
 
I used to hate meatloaf until I found this recipe a few years ago. Now we get excited on meatloaf night.

Brown Sugar Meatloaf

1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 sm. onion
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs

Preheat oven to 350 Lightly grease a 5x9 loaf pan
Press the brown sugar into the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a bowl thoroughly mix all the remaining ingrediants and shape into a loaf. Place on top of the ketchup.
Bake for 1 hour or until juices are clear.
