First off I have been to WDW 12 times since 1997. This will be my 13th trip and there is so much I havent done.
I've went to all the Value Resorts taking pictures while we were at the POP, I call hotel hopping. We do DTD, RFC and DQ. We do all the parks and done both water parks.

Here is my itinerary:

Aug.6th Thurs.- breakfast, load my car & head to Lorton,VA to Auto Train.
Aug.7th Fri.- unload train, drive to POP, check in, head to Ponderosa and
Walmart if the room isnt ready. Come back, shower, nap then pool and
dinner.
Aug.8th Sat.-Park (not sure which one yet)
Aug.9th Sun.-Park (not sure which one yet, but leaning towards AK because
it closes early and we have a early ressie the next day
Aug.10th Mon.- Kona Cafe @8:05 A.m. This is a rest day so I was thinking
walking around Poly and take pictures & other Mods too, not sure.
Then hang around POP, nap, pool. Rest Day Really.
Aug.11th Tues.- Park (?)
Aug.12th Wed.-Park(?)
Aug.13th Thurs.-Sleep in, Hotel hop the values, pool, pack up
and O'hana @ 9:40p.m
Aug.14th Fri.-Sleep late, snack in room, check out. Unsure of what to do
while witing for room at CBR to be ready, maybe DTD. CBR a
suprise for my DD's ages 16 and 7 (she turns 7 this day). Check-in,
dinner, pool.
Aug.15th Sat.- (?)
Aug.16th Sun.- (?)
Aug.17th Mon.- (?) Pack, pool and dinner.
Aug.18th Tues.- Check out, lunch, head for auto train.

I have open times that I dont know what to do in. Any suggestions?
The 1st half of my stay (POP) is the 4/3 deal that had no water parks or DQ without an extra cost which I am not sure if I'll be able to swing. I also heard that going to other hotel pools are looked down on, so I was wondering about that. Thanks

Not sure if you have seen the other resorts, however if you haven't AKL is a trip all by itself. Relly I must see. Good eats too!!! No matter what you do you are going to have a great time.. I just wish I could schedule as much relax time as you have!! I'm only going for 8 days!!! Enjoy!!!

Pool hopping used to be allowed but several years ago it became against the rules. If the pools are crowded they will even go around and check your room ID to see if you are really staying at that resort. Some people still try it, but I wouldn't risk getting caught, plus you are teaching your kids to break the rules.

I would do a half or even a full day at DTD if I were you. There are several nice places to eat and shop and we have even seen a movie there a couple of times. I highly recommend Cirque if you have not done it, or maybe DQ.

Other things we have done are rent a boat (we got a big pontoon boat at Wilderness Lodge Marina) and go around the waterways, ride the monorail and get off and visit each hotel, and book a meal at AKL and just hang out for a while. We have done this at GF too.
You could also do putt putt golf.

I can't even imagine staying that long, I'm not sure if I would want to?
