My boss has invited my hubby, another co-worker and her hubby and myself to a little Christmas get together. She is serving lasagna, salad, rolls, wine and will have appies out first. We were chatting about it at work today. I told her I would bring dessert....but then I thought what kind of special dessert goes well after a hearty dinner like that? So here I am pleading with you for a really special dessert to make.....

Recipes please!!!!
 
Well tiaramisu comes to mind - a traditional and relatively light dessert. And Giada is all about lighter Italian cooking so you could check her area of foodnetwork....

If I were doing this at home I would probably do something light such as a sorbet.

Gelato or sorbet with fresh fruit. Light and refreshing!
 
I don't know if you would consider this light but I have had RAVE reviews anywhere I have ever brought it. I actually have people request it constantly. http://www.eaglebrand.ca/recipepage.asp?rid=781 I make them cupcake size or bite size (mini cupcake tin). They are also SO easy to make. People think I am a master chef and I got it off a tin!
 

If you have a perkins near you they have great pies. Otherwise I always have lasagna for xmas and cheesecake goes over very well with italian food.
 
what about a Pavlova?

A cooked (dry) meringue ring, with whipped/sweetened cream and berries piled into the central hole & sprinkled with toasted almond flakes. Very luxurious, tasty but light. Easy to make but looks impressive.

You could make it more exotic by adding different fruits - peaches, paassionfruit, mango et.

another of my favourite party desserts is a roulade.

Sponge cake mix cooked in a swiss roll tin (shallow rectangular, about 9 by 12 inches). Spread with good layer of sweetened whipped cream and berries, then rolled up into a log, sprinkled with powdered sugar.

You could make a chocolate flavoured one, sprinkle with sugar and perch a small robin on the top, to make a traditional Yule Log.

(sorry,hope this is clear - I am english, I think I might use different words for the same thing!! )

I have a recipe for a chocolate chip peanut butter pie, that is light and heavenly. Also, what about a pumpkin roll (looks nice and is great) or maybe a rum cake. I'll be happy to post either of these recipes if interested.

Ohh, that does not sound like fun.

Back to dessert I have this recipe for Tira-Mi-Su:

2 c. mascarpone cheese
3 c. heavy cream
1/4 c. powdered sugar
1/2 tsp. vanilla extract
3 T. coffee liqueur
1 tsp. instant coffee
1 10 inch sponge cake
1/4 c. cocoa powder

Combine cheese, cream, sugar, vanilla, liqueur, and instant coffee in a mixing bowl and whip until stiff. Split sponge cake in half, creating a top and bottom layer. Spread cream mixture on bottom layer and replace top half of cake. Refrigerate for 1 hour. Just before serving, dust top of cake with cocoa powder.

I also have this recipe from my physical therapy days. We had this old Italian lady as an outpatient and she would always bring in food to feed us. One thing whe would bring was what she called "Italian Cake", it is really good:

1 pkg. vanilla pudding
1 pkg. chocolat pudding
2 pkgs Stella D'Oro Anisette Sponge Cookies
1/2 c. Kahlua, or any other cordial you like: amaretto, anisett, cream de cacao etc.
1/2 c. water
1/2 pt. heavy cream
1 pkg. slivered almonds

In a spring form pan, use 1 pkg of cookies to layer the 1st layer of the cake,sponge side up (cram them in). Mix liqueur and water and sprinkle 1/2 mixture on cookies. Cook vanilla pudding and pour over cookies. Then layer the 2nd pkg of cookies as above, and sprinkle with remaining liqueur mixture.
Cook chocolate pudding and pour over cookies. Place in refrigerator overnight or until pudding sets. Beat cream until stiff. Take cake out of pan, and frost top and sides with whipped cream. Sprinkle almonds on sides of cake, and top if you like. Refrigerate.

Everything blends together with this cake, the cookies absorb the pudding, and it is soo good.
 
How about a DELICIOUSL Lemon Roll - it is nice and light and sooo yummy -
(this is my swap recipe - lol)

1 pkg, angel food cake (16 oz.)
3/4 c. powdered sugar, divided
1 pkg, (8 oz.) cream cheese, softened
1 lemon
7 drops yellow food coloring, (optional)
1 8oz. container light cool whip
1 jar (11.75 oz) strawberry ice cream topping
12 fresh strawberries for garnish

Using your PC stoneware bar pan, or a jelly roll pan, prepare angel food cake according to package directions and cook at 350°F for 30-35 minutes. If using pc bar pan, cut an 18 inch piece of parchment paper to line pan. I guess you could use it in a regular jelly roll pan too!

After removing from oven to cooling rack, evenly sprinkle 1/2 cup of powdered sugar over top. Place another piece of parchment paper over top of cake. Place cooling rack on top of cake and carefully invert. Remove pan from cake and parchment paper from cooked side of cake. Roll up cake in parchment paper as for a jelly roll and cool completely.

Unroll cake and spread with 1/4 cup of strawberry ice cream topping. I used a little more than that cause I really like the strawberry stuff!! Combine cream cheese, 1/4 c. powdered sugar, zest of whole lemon and 1 Tblsp. juice from lemon. Add food coloring if desired. Fold in 1 cup of cool whip. Gently spread over stawberry topping. Re-roll cake and sprinkle with more powdered sugar.

Serve with remaining cool whip and fresh strawberries.
