I mostly use my maple syrup to make a glaze for ham or chicken.

I mix it up with brown mustard and brush it on the meat before cooking.

Yummy!

How about making a maple-flavored cheesecake, instead of almond? Yummy!

Atkins has a pancake mix. Cost around $5.00 and I buy it at Acme or GNC. Only 3 net carbs per serving. Taste pretty good with the syrup(don't use atkins syrup it's lousy). Also watch you don't buy the buttermilk pancake mix that is a lot higher in carbs.

I love the Atkins pancake/waffle mix but I usually make just waffles. The pancakes have too much of a soy flavor to me.

I also put some of the sugar free syrup in my food processor and add about 1/4 t of xantham gum or Atkins thick and thin and swirl it until it is smooth. This makes the syrup thicker but it also makes it cloudy. My husband prefers a thicker syrup he doesn't care what it looks like :)

Make sure if you buy the Atkins Pancake mix it's the Deluxe kind, it's so much better than the plain pancake mix.
Enjoy!

I've got a great recipe for mock french toast. It is one of my favorite breakfasts and I put the lc syrup on it for me and DH. It's simple to make and the french toast comes out looking like crepes but they taste just like french toast to us. Enjoy!

MOCK FRENCH TOAST

1 egg
4 egg whites
1/4 cup fat free ricotta cheese (I use part-skim)
1/2 tsp vanilla
1 tsp Splenda
Sprinkle of cinnamon
Combine all the ingredients thoroughly and pour like pancakes on a hot skillet.
Makes 2 servingsPer Serving: 76 Calories; 2g Fat (1g saturated fat); 11g Protein; 2g Carbohydrate; trace Dietary Fiber; 95mg Cholesterol; 152mg Sodium. Exchanges: 0 Grain(Starch); 1 1/2 Lean Meat; 0 Fat; 0 Other Carbohydrates

ZerasPride~~be sure and post that recipe to our Eating Healthy board so that it can be added to the Low carb recipe index

Thanks for the recipe, Zeraspride!! :)

I use the Atkins waffle mix, which is pretty good, I think...Kath thanks for the tip on the syrup...I like mine thick as well, but could never figure out what to use to make it that way!! :)

Here's another idea with the syrup too.... Get the low carb hot cereal from wal-mart and add a little syrup in it to flavor it, makes it pretty good :)
