recipies. Now that the kids are in school what are your best and easiest recipies. I love to make one dish type of things, soups casseroles, things that have veggies etc... Please share with me, because I am tired of thinking LOL!
 
Picante Omelet Pie

1/2 cup picante sauce
2 cups shredded cheddar cheese
6 eggs
1 cup sour cream

Pour the picante sauce into a lightly greased 10 in. pie plate. Sprinkle with cheese and set aside. In a blender or food processor, blend eggs and sour cream until smooth. Pour over cheese. Bake at 375 for 20-25 minutes until knife inserted near center comes out clean.

Chicken Artichoke Casserole

Amount Measure Ingredient -- Preparation Method

3/4 cup chicken broth
4 cooked chicken breasts -- shredded
1 can artichoke hearts
6 tablespoons butter
1/4 cup flour
1/4 teaspoon salt
3/4 cup half and half
1/2 cup Parmesan cheese
2 tablespoons sherry
1/4 pound mushrooms
pepper -- to taste

Saute mushrooms first.
Melt butter and add flour, salt and pepper. Stir until bubbly. Add sauteed mushrooms. Remove from heat.
Stir in 3/4 cup chicken broth. Slowly add half and half.
Put back on low heat and stir until thickened. Add cheese and sherry.
Remove from heat. Stir in chicken.
Bake 350 degrees for 30-45 minutes, until hot.
Serve over rice or noodles.

Inside-Out Ravioli

Amount Measure Ingredient -- Preparation Method

1 pound ground beef
1/2 cup onion -- chopped
1 clove garlic -- minced
10 ounces frozen chopped spinach
1 pound spaghetti sauce with mushrooms
8 ounces tomato sauce
6 ounces tomato paste
1/2 teaspoon salt
dash pepper
2 cups shell pasta -- cooked and drained
1 cup cheddar cheese -- shredded
1/2 cup soft bread crumbs
2 eggs -- well beaten
1/4 cup salad oil

Brown first 3 ingredients in large skillet.
Cook spinach using package directions. Drain, reserving liquid. Add water to make 1 cup.
Add spinach liquid and next 5 ingredients to meat mixture. Simmer 10 minutes.
Combine spinach with pasta and remaining ingredients.
Spread in 13x9x2" baking pan. Top with meat sauce.
Bake at 350 degrees for 30 minutes. Let stand 10 minutes before serving.

Lattice-Top Chicken

1 can condensed cream of potato soup
1 cup milk
1/2 teaspoon seasoned salt
2 cups cubed cooked chicken
16 ounces frozen broccoli, carrots and cauliflower
1 cup shredded cheddar cheese
1 can french fried onions
1 package refrigerated crescent rolls

Combine soup, milk, salt, chicken, vegetables, 1/2 cup cheese and 1/2 can onions.
Place in 8x12" baking dish.
Bake, covered, at 375 degrees for 20 minutes.
Unwrap crescent rolls. Separate into 2 rectangles. Press together perforated cuts. Cut each rectangle lengthwise into 3 strips.
Place strips on casserole to form lattice top.
Bake, uncovered, 15 minutes longer.
Top lattice with remaining cheese and onions. Bake uncovered, 3-5 minutes.

15 Minute Chicken and Rice Dinner

1 tablespoon oil
4 small boned and skinned chicken breast halves
1 1/2 cups water
1 can condensed cream of chicken soup
1/4 teaspoon paprika
1/4 teaspoon pepper
2 cups broccoli florets -- fresh or thawed
1 1/2 cups instant rice

Heat oil in large nonstick skillet on med-high heat.
Add chicken. Cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet.
Add water, soup and seasonings; stir. Bring to a boil.
Stir in rice and broccoli. Top with chicken. Cover. Cook on low heat 5 minutes.
 

Real easy Chicken and brocolli
Cook chicken I usually boil brests thighs or whatever I have,
pull chicken apart and put in bottom of 13x9 cake pan or any baking dish.
Cook brocolli I like using fresh but frozen will do, you can use as much as you want as with the chicken(sorry but i have no exact measurments)
mix 2 cans cream of brocolli soup with about 1/2 to 3/4 can of milk just enough to make it creamy not to thin
put brocolli over chicken, pour soup mixture over. sprinkle with shredded cheese again as much or as little as you want, over cheese sprinkle lightly with bread crumbs. Bake at 350 till cheese is melted and soup in bubbly.
 
I put a cup of uncooked ice into the bottom of the chichen broccoli casserole. Then the whole dinner is done in one dish.
 
Thank you for the ideas! I am going shopping this weekend to make sure I have all the ingrediants! If you have more recipies let me know them, they don't have to be one dish meals, just fairly easy, you know the no fuss, no muss type!

Well....I won't win a "what a healthy meal award" with these...but these are VERY quick....no fuss....and my kids love them..

Side Dish....

Veggies with cheese sauce:

1 bag of your favorite frozen vegetables...(my kids love broccoli, cauliflower, or a combination)....place in a microwave safe container, cover with enough water to "steam"....drain....add 1 can of cheese soup......stir and serve.

Main Dish.....

"Chicken Parmesan":

Frozen or refrigerated breaded chicken patties....(microwave if frozen)....
Add 1 slice per pattie of the cheese of your choice
Top with jarred spaghetti sauce and sprinkle parmesan cheese over top....
Microwave until heated through.

We certainly don't eat like this every nite....sometimes we have McDonalds:rolleyes:
....BUT....these are "desperation dinners" when I have to work late...(frequently)....and need to get my kids fed quickly.....
 
These do sound good. I am looking for things that are kid friendly. I'm so tired of having the "what's for dinner" fight.
 
Here's one we like.

Easy Chicken Pot Pie

3 boneless/skinless chicken breasts
3 large potatoes--diced
carrots---diced
1 small onion---dice
1 c. frozen baby peas
1 can cream of chicken soup
1 refrigerated pie crust

Boil chicken breasts in salted water. After about 30 minutes add the vegetables and continue to cook until the chicken is done and the vegetables are tender. Remove chicken and chop into small pieces and drain vegetables (reserving 1 cup of liquid)

Layer chicken and vegetables in an oven proof dish (I use a deep cast iron skillet) Combine cream of chicken soup and reserved cooking broth and bring to a boil and pour over chicken and vegetables. Top with the refrigerated pie crust and cut slits for steam to escape. Bake @375º until crust is golden and filling is bubbly.

Sometimes I cook the chicken and vegetables at night while I'm cleaning up from dinner and then put the pot pie together the next night and pop it in the oven for a fast meal with little mess.
 
This one is easy . . . and oh so delicious! Don't ask me where the name came from, though, because I don't know.

Big Bertha

Sauté:
1 lb. lean ground chuck
2 cloves garlic, minced
1/2 c. green onion, sliced
1 small can sliced black olives

Add:
2 cans stewed tomatoes
1 pkg. taco seasoning mix
1 can chopped green chilies

Simmer for about 20 minutes.

Other ingredients needed:
1 (14 oz.) pkg. Doritos
1/2 lb. Monterey jack cheese shredded (more if desired)
1 pt. sour cream
1/2 c. cheddar cheese shredded (I use more)

In a 9 X 13 pan, layer half of the pkg. of Doritos. Add meat mixture on top—then the Jack cheese—next the sour cream—and then the rest of the chips. Cover with foil and bake at 325 for about 15 minutes, uncover, then add the shredded cheddar cheese and finish baking, about 15 more minutes. Serve with taco sauce.
 
Here's another easy recipe that I just love. It came from Midwest Living Magazine. They had an article on recipes that firemen made . . . I tried it and it has become one of my favorites.

Brown 1 lb. of ground beef with onions and green peppers (I use red peppers instead) and some salt and pepper. Add 8 oz. of sliced smoked sausage (I use more than 8 oz.). Stir in a bag of frozen corn and diced potatoes. Cook over medium heat stirring occasionally so the bottom doesn't burn. When the potatoes look brown and cooked it is ready to eat. The original recipe called for putting shredded cheddar cheese over the top just before it was done so it could melt but I forgot to do it so I just eliminate the cheese. I hope you try it. I always make a little more because it is wonderful leftover, and it microwaves great.
