OK, DIS cooks...need a good snack recipe!!

Hi all -

We're having a snacks potluck
at work tomorrow for Bosses Day. In true fashion, I haven't prepared yet for what I will bring. Care to share any of yor recipes for easy, fast snacks I could bring? I could just go to the store & buy a bag of Chex Mix but I'd like to avoid that. :)

When I need a quick snack (for school or home) I make my own version of trail mix. :)

Honey nut Chex
Cheez Its
M&M's
Peanuts
Pretzels

And whatever other miscellaneous things I have laying around that would work well with the mix. :laughing:
 
Make your own chex mix then! It's very easy, but it does take a bit of time to bake. Soooooo yummy! That's it I'm going to the store so I can get stuff ot make it!
 
I like to make chocolate chip peanut butter cup bites.

I package of 24 chocolate chip cookies (the refrigerated kind, uncooked)
Cut each cookie in half
Place in a Pam sprayed mini cupcake well.
Bake for the required time
As soon as they are out of the oven, push a mini Reese's PB cup into the middle.
Let cool, helps to put in the fridge for a little while.
 

Roasted Garlic and Sun-Dried Tomato Spread

Ingredients
7 Large bulbs of garlic (or a jar or two of roasted garlic)
1½ Tbsp Olive Oil (not needed if you use jar of roasted garlic)
1½ Pounds softened cream cheese
½ Pound Feta Cheese
3 Tbsp Chopped Fresh Oregano leaves
1 Pound sun-dried tomatoes packed in oil (1½ cups)
1 cup toasted walnuts

Preparation of Ingredients

1. Cut off about the top quarter of each of the garlic bulbs. Sit them on a large sheet of aluminum foil. Drizzle about ½ tsp of olive oil on each. Completely enclose them in the foil and roast in a 450 degree oven for about 45 minutes. (Or open and drain the jar of roasted garllic)

2. Crumble the Feta Cheese.

3. Drain the oil from the tomatoes and chop in a food processor. (Note - these are normally found in the produce section in a grocery store.)

4. Chop the walnuts.

Putting it Together
1. After the garlic has cooled, squeeze out the pulp from each clove into a large bowl. Avoid getting any of the skin in the bowl.

2. Add the cream cheese, blending well. Then blend in the feta cheese.

3. Then stir in the oregano, tomatoes, and walnuts.

4. Refrigerate for at least two hours to one day, covered, before serving.
 
A fast and easy sweet snack:

Lay small pretzels on a baking sheet in a flat layer.

Top each pretzel with an (unwrapped) Hershy's Kiss

Bake on about 200 for about 5 minues--to soften the chocolate

While kisses are still warm and soft push an M&M into each kiss (to flatten)

Let cool.
 
I just cut this recipe out of a magazine and I'm dying to try it. It's a Greek version of a 7 layer dip.

5 Layer Greek Dip
1 pkg (7 oz) plain hummus (or you could make your own)
1 pkg (4 oz) Feta cheese, crumbled
1/2 cup chopped tomato
1/4 cup chopped cucumbers
2 tbsp chopped kalamata olives

Spread hummus onto bottom of 9 inch pie plate.
Cover with layers of remaining ingredients.
Serve with pita chips or small slices of pita bread.

If you want to go totally UNhealthy, then I highly recommend this dip:

Reuben Dip
1 can corned beef chopped finely
1 16 oz can sauerkraut rinsed and dried
1 cup 1000 Island dressing
1 1/2 cups shredded swiss cheese
3 oz package cream cheese cut into pieces
1 tbs prepared horseradish
1 tsp caraway seeds

Combine all ingredients in a small Crock Pot. Cover and cook 2.5 to 3 hours. Serve with pieces of rye or pumpernickel bread.

The reuben dip is a big hit even with folks that don't like sauerkraut usually.

I had this the first time last year and was instantly addicted. I know it doesn't SOUND like it would be yummy but trust me, it is.

My DF calls this Crackle but on All recipes it was called Saltine Toffee cookies, I left out the nuts.


Ingredients

* 4 ounces saltine crackers
* 1 cup butter
* 1 cup dark brown sugar
* 2 cups semisweet chocolate chips


Directions

1. Preheat oven to 400 degrees F (205 degrees C).
2. Line cookie sheet with saltine crackers in single layer.
3. In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
4. Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.


She also makes the pretzels with kisses on top and they are equally yummy.
 
Ooh the pretzels with hershey's kisses are very good too and easier than chex mix. Here's another great dip recipe, but there is a bit of work involved, unless you want to buy the pre-cooked bacon.

Neiman Marcus Dip


¼ cup roasted almonds, slivered
4 strips bacon, cooked and crumbled
1 cup sharp cheddar cheese, grated
1 teaspoon green onions or chives, chopped
½ cup mayonnaise
salt to taste

Preheat oven to 350 degrees. Spread almonds on cookie sheet and
roast in oven for 10 minutes or until roasted. Fry four bacon strips until
crispy. Let bacon cool and then crumble. Combine all ingredients until well
mixed. Spread on party crackers such as Triscuits or Wheat Thins.
 
My easy, fast go-to snack is literally 3 ingredients, 4 if you want to add meat.

Velveeta cheese
Jar of salsa
Tortilla chips

Chunk up the cheese and put into a crock pot with the salsa (add browned hamburger if you want) on warm, let it melt together. Will need to give it a stir once in awhile.

You can put it all in the crock pot at home and then plug it once you get to work, little mess, easy snack!
 
I second the hershey kisses on the pretzel thing. Those are MMMMMM.

AND I have also had the "crackle" that someone mentioned (the salitine cracker snack)
