i made reservations for 6:25 thinking wishes was at 9 pm, but turns out it's at 10. we got reservations for 7:50 after noticing this. which one would be better to go to? obviously, i will cancel the one we don't need.

I would say 7:50 if you want to try to see it from your table since you can expect a sitdown meal to take about 1 1/2hrs. You may not get a window seat though. Earlier if you want to watch from the beach. On our two trips at the Poly our favorite memories are of waiting for and watching the water parade and wishes from hammocks and loungers on the beach. If you want a realy quiet moment you can watch from Tahiti beach you may even be alone watching (no sound there). The worst that would happen is you spend an hour or so waiting or the festivities.. I would stick with the 7:50. We had a reservation last year for 8:25 PM. We asked for a table on the fire pit side, and just so happened they gave us a perfect table right in front of the window. You will be able to see the electrical water parade as well. :goodvibes
 
Are you looking to watch from the restaurant or the beach. Although it's nice to be able to watch Wishes from your table (if you get a window table that faces MK and your timing is right), it's not exactly the best view and you can't be certain that you can get a table with a Wishes view. Don't put too much stock in trying to time watching Wishes while eating (it's not like CG). The best view of Wishes is from MSUSA, so I would say your better off leaving yourself enough time to not rush your meal and then either get down to the beach or even get to MK. Keep the earlier ADR if you figure on waiting 30 mins or so after your ADR time plus the 90 mins or so to eat.
 

I have seen Wishes from a great table in the restaurant and if I were to do it again I would head to the beach instead. There was something about not "hearing" them that made it less real.
I would keep the earlier reservation and eat a leisurely meal and then full and happy head to the beach.
When do you plan to cancel the extra reservation?
